There is nothing better than a good ole fashion baked potato loaded with all your favorite toppings. There is nothing better than the addition of a great tasting Brisket that makes it a meal all in one. Brisket Loaded Baked Potato was created with comfort, flavor & down right delicious in mind.

I love a great tasting smoked Brisket but anyone knows that cooking a Brisket is costly and takes times to make it tender and perfect. If you are anything like me, I am always looking for budget friendly meals cooked in minimal time. While my husband was out making a Walmart run, he came home with a prepackaged, already cooked Brisket. Now I absolutely am not a fan of anything I have previously tried that was precooked and prepackaged. To let you in on a secret, if you come across Sadler’s Smokehouse Brisket, grab it immediately. It was as close to home cooked as it could be! It could be a little pricey depending on the package size but definitely not as expensive as buying an uncooked Brisket and preparing it yourself. Its a win/win.

We all love a Baked Potato from time to time. While some like it simple with Butter, Sour Cream and some Salt & Pepper, I wanted to go above and beyond and make it overdrive. Loading it with sauteed Mushrooms & Onions, Broccoli, Brisket and that wonderful Cheese Sauce makes all the extra calories worth it. Not a meal for a daily choice on my menu but definitely for a today fix for sure.

Give a try on my Brisket Loaded Baked Potato where something so simply prepared can make and night a fancy fare. No one needs to know it was precooked, prepackaged or done in and hour or so. I won’t tell if you don’t.

Brisket Loaded Baked Potato

Baked Potato loaded with Brisket, Broccoli, sautéed Mushrooms & Onions and topped off with a Cheese Sauce

Ingredients
  

Protein

  • 1 lb Prepared Brisket Sadler's Smokehouse Fully Cooked Brisket from Walmart is phenomenal !!! Heats up in 30 minutes in oven.

Produce

  • 1 Large Yellow Onion Sliced thinly
  • 1 Package Portabella Mushrooms Sliced
  • 3 cups Broccoli Cut in bite size pieces.
  • 6 Large Baking Potatoes Washed and dried with paper towels.

Dairy

  • 8 oz Velveeta Queso Blanco Cubed
  • 1 cup Shredded Italian Blend Cheese Shredded
  • 2 cups Milk Your choice of Milk
  • 1 tbsp Butter

Seasonings

  • 1 tbsp Garlic Herb Seasoning
  • Salt
  • Pepper

Oil

  • Olive Oil

Instructions
 

Prepare Baking Potatoes

  • Preheat Oven to 425°F
  • Place Potatoes on baking sheet.
  • Using a fork, pierce each Potato several times to allow heat to vent while baking.
  • Rub each Potato with some Olive Oil. This will help crisp up the skin and allow Salt to stick.
  • Sprinkle a couple generous pinches of Salt all over.
  • Bake for approximately 45 minutes to 1 hour or until fork tender and the skin is crisp. Baking time will vary depending on the size of the Potato.

Meanwhile… Vegetable Preparation

  • Heat a pot of water on medium high and cook Broccoli for a couple of minutes. You want it to still maintain some crispness or if you prefer to cook all the way through, by all means do so. You may also steam them as well. When they are done, set aside in a covered bowl to stay warm.
  • Heat Skillet on medium high adding Butter and a drizzle of Olive Oil.
  • Begin sautéing Mushrooms & Onions until they are tender adding a pinch of Salt & Pepper midway through cooking time. Set aside when done.

Meanwhile… Prepare Cheese Sauce

  • Place Cheese and Milk into a small pot and begin melting cheese on medium low. Be sure to stir consistently so that the cheese does not burn on the bottom of pot. If Cheese Sauce is not thick enough, add more cheese. If the Cheese Sauce is too thick, you may add a little bit of milk at a time until the right consistency is achieved. You want it thick and not too runny.

Prepare Brisket Loaded Baked Potatoes

  • Slice Baked Potatoes down the middle but not all the way through. Using both hands, squeeze in the sides as you slightly pull apart to loosen the flesh inside. You may use a fork to separate the flesh from the skin. At this time you may season with a pinch of Salt & Pepper to taste.
  • Give a rough chop to your prepared Brisket (be sure it is nice and hot)
  • Add a generous portion of sautéed Mushroom & Onions, Broccoli and Brisket. Pour the Cheese Sauce over top and enjoy.
  • Suggestion: May top off with a dollop of Sour Cream and Scallions for additional flavor.
