Pork Chop Medley delivers juicy Pork Loin served with a Medley of vegetables consisting of Bok Choy, Onions, Eggplant, Mushrooms and Green Peppers in a Sweet & Spicy Sauce. A sweet & savory dish that even the pickiest of eaters will enjoy.
I don’t eat Pork Chops often but when I do, boneless Pork Loin is always my go to. It is considered the leanest and most tender cut that derives from the Pigs shoulder to hip. They are juicy and tender when properly prepared and provide a perfect pairing to most side dishes. Most Pork Loin has a layer of fat that surrounds it which renders as it is cooked and can vary in thickness. You can also choose options with no fat visible as well as bone in.
A medley of Vegetables brought together to create a cohesive dish. A perfect opportunity to use up some vegetables in your refrigerator or if you are like me, try out some new ones. With so many options available in the market, your Medleys are limitless. My blend of Bok Choy, Onions, Mushrooms, Eggplant & Green Pepper was just a mixture of what I had on hand. The addition of fresh Garlic and Jalapeños adds a little Spice and right up my alley.
Pork Chop Medley combines both juicy tender Pork Chops and my Vegetable Medley. Finished off in a Sweet & Spicy sauce made up of simple pantry items of Brown Sugar & Soy Sauce reminiscent of a Teriyaki Glaze. Did I mention… this is absolutely easy to make and delicious. Enjoy!!
Pork Chop Medley
Equipment
- Cast Iron Pan
- Large Bowl
- Knife

Ingredients
Protein
- 4 Boneless Pork Loin Chops May substitute for your choice in cut.
Produce
- 2 Bundles Baby Bok Choy Washed, ends trimmed and sliced lengthwise.
- 1 Yellow Onion Sliced thinly.
- 12 oz Portabella Mushrooms Slice or Quartered for Chunkier texture.
- 1 Eggplant Cubed.
- 1 Bell Pepper Sliced.
- 2 Jalepenos Chopped.
- 4 Garlic Cloves Chopped.
Seasonings
- 1 tbsp Garlic Herb Seasoning No Salt
- 1 tsp Onion Powder
- Salt To taste.
- Black Pepper To taste.
Sweet & Spicy Sauce Preparation
- 1/4 cup Mushroom Soy Sauce Can substitute for Regular Soy Sauce.
- 3 tbsp Brown Sugar More or less depending on how sweet you would like sauce.
- 1 tbsp Cornstarch
- 1 cup Water
- 1/2 tsp Salt
- 1/2 tsp Red Pepper Flakes

- Olive Oil
Instructions
Pork Chop Preparation
- Place Pork Chops in a Bowl, add a drizzle of Olive Oil, Garlic Herb Seasoning, Onion Powder, and a couple generous pinches of Salt & Pepper. Using your hands, massage seasonings into Pork Chops being sure to coat on all sides. Set aside and let marinade for 20 minutes.
Pork Chop Cooking
- Heat Cast Iron Skillet on Medium/High.
- Drizzle with Olive Oil to coat. When nice and hot, add Pork Chops in Skillet and begin searing for 4-5 minutes until browned than flip over and continue searing for additional 4-5 minutes or until internal cooking temperature reaches 145℉ – 150℉. Cooking time will vary depending on the thickness of the Pork Chop. Remove from pan, cover and set aside to rest.
Sweet & Spicy Vegetable Medley
- In the same Skillet used to cook Pork Chops, add a drizzle of Olive Oil.
- Add all your Vegetables and begin to Sauté for 3-5 minutes.
- When Vegetables begin to soften, add a couple generous pinches of Salt & Pepper and continue to Sauté stirring periodically.
- Meanwhile, in a small mixing bowl, add the ingredients for Sweet & Spicy Sauce. Whisk to incorporate.
- Gently pour mixture onto the Vegetables and mix to incorporate. Lower cooking temperature to medium and continue to Sauté for additional 3-5 minutes or until sauce thickens. Taste to see if additional seasonings are needed.
Serving
- Place Sweet & Spicy Vegetable Medley on a dish. Top with seared Pork Chop and enjoy!
