If you love Pierogis, you will absolutely love a Pierogi Casserole. While sitting down for dinner enjoying a plate of Pierogis, caramelized Onions and Sour Cream, my mind got to thinking about how I can deconstruct it and create a whole new meal. Not realizing the Pierogi Casserole was already out in the world to try. Viewing different recipes others have tried, I had to create a version that I can call my own.
Common ingredients in all the recipes consisted of Lasagna Noodles, Mashed Potatoes, Cheese and occasionally Onion. While it looked good in the pictures, I couldn’t get past the idea of it just being a bit dry as all were lacking in any type of sauce. My mind is racing and excitement kicks in. I tried my hand at creating a Pierogi Casserole and upgraded it to something decadent and delicious. Loading it with flavorful Bacon, Caramelized Onions and a Creamy Sauce. I never thought I would love this dish as much as I love Pierogi’s but who was I kidding, I love it so much more.
With the traditional ingredients found in any of your favorite Pierogi’s, we take it for a spin. Adding the Sour Cream & Cream Cheese Sauce made this dish so much more that I’m excited to pass this recipe on to you in hopes that you enjoy it as much as I do. Try your hand on this great tasting dish and I promise you, Pierogi’s will never be viewed the same.

Pierogi Casserole
Equipment
- Large Baking Dish
- Deep Pot
- Skillet
- Colander
Ingredients
Produce
- 1 6 Large Russet Potatoes or Potatoes of your choice.
- 1 Bunch of Scallion Onions
- 4 Large Onions
Pasta
- 1 Box of Uncooked Lasagna Noodles
Dairy
- 1 Quart of Heavy Cream
- 2 Tubs Onion & Chive Cream Cheese
- 16 oz Sour Cream
- 4 oz Cream Cheese
- 24 oz Shredded Mexican Blend Cheese or Cheese of your choice.
- 4 tbs Butter
Protein
- 1 Package of Bacon of your choice
Seasonings
- 2 tbs Garlic Herb Seasoning
- Salt
- Black Pepper

- Olive Oil
Instructions
Cooking Instructions
- Slice Onions into thin ringlets.
- Heat Skillet on medium. Add 2 tablespoons of Butter and a drizzle of Olive Oil and heat Skillet until Butter is melted. Add Onions and begin sautéing until it begins to caramelize and soften. Add a pinch of Salt & Pepper to taste and continue stirring periodically. Cooking time will vary but may take 15-20 minutes or so.
- Peel Potatoes and cut into cubes. Place in a pot of salted water and bring to boil. Cook Potatoes 15 -20 minutes until fork tender. Drain and place back into same pot.
- Add 1/2 of Sour Cream, both tubs of Onion Chive Cream Cheese, 1 tablespoon Garlic Herb Seasoning, 6 oz. of Shredded Cheese, 2 tablespoon of Butter, Salt & Pepper to taste. Using Potato Masher, mash all together until ingredients are incorporated and Potatoes are smooth. Taste again to be sure no additional seasonings are needed.
- Slice Bacon into small pieces. Cook in skillet until browned and a little crispy. Remove and place on paper towel lined plate to drain Bacon grease.
- Bring a pot of salted water with a little Olive Oil to boil. Cook Lasagna Noodles according to directions on package being sure to stir occasionally to avoid Pasta from sticking together. Pasta should be Al Dente since it will continue to cook in oven. Drain in colander and run cold water over it to stop the cooking process.
- In a pot, add Heavy Cream, remaining Sour Cream, 4 oz. Cream Cheese, 6 oz Shredded Cheese, 1 tbsp Garlic Herb Seasoning, Salt & Pepper to taste. Heat on medium/high stirring consistently until it thickens. Taste to be sure no additional seasonings are needed.
Assemble
- Preheat oven on 350°F
- Spray your Baking Dish with nonstick spray.
- Drizzle a little sauce at the bottom of dish.
- Add layer of Lasagna Noodles.
- Spread a thin layer of prepared Mashed Potatoes.
- Place caramelized Onions sporadically over Potatoes.
- Sprinkle Shredded Cheese over Onions.
- Spread a layer of cooked Bacon pieces over Shredded Cheese.
- Drizzle Cream Sauce over everything.
- Repeat until completing 3 layers or more if your baking dish is deep enough.
- You want to make sure you finish off the last layer using the Cream Sauce and a layer of Shredded Cheese.
- Cover with foil and bake in preheated oven for 30 minutes or so to allow cheese to melt and all ingredients heat through.
- Remove when done and let it sit to allow it to set.
- Prior to serving, garnish with Chopped Scallions and additional Bacon Pieces.
- Serve with a side of Garlic Bread and Enjoy.
