While we all look for a healthier take on some of our favorite meals, let’s get real, you would think it takes some serious imagination to make it happen… right? Wrong! Cooking Chicken thighs are always an easy approach to having a juicy and satisfying meal prepared in a short period of time. While we shy away from frying Chicken in those unhealthy oils, you can still enjoy some great tasting Chicken in a form of creating a good sear on it. How easy does that sound? Pretty simple huh? Now, Sweet Potatoes are a great alternative to that white starchy potato, it’s what you put on it will determine how healthy you are going to keep it. Today is not the day to talk healthy on my Sweet Potato since I had to take it to the dark side just a bit. Apricot and Brown Sugar glaze on those babies had me singing to the heavens. Chicken Thighs & Apricot Glazed Sweet Potatoes

Ingredients
  

Meat/Poulty

  • 4 Chicken Thighs Cleaned & Deboned

Produce/Vegetables

  • 2 Large Sweet Potatoes Peeled & Sliced Thinly
  • 3 cups Broccoli Florets

Seasonings & Spices

  • 1/4 cup Light Brown Sugar
  • 1 tbsp Cumin
  • 1/4 tsp Cayenne Pepper Optional
  • 1 tbsp Onion Powder
  • 1 tbsp Garlic Powder
  • 1 tbsp Garlic Herb Seasoning No Salt
  • Salt
  • Pepper
  • Red Pepper Flakes

Oil

  • Olive Oil

Other

  • 1/4 cup Apricot Preserves

Instructions
 

Chicken Thighs Preparation

  • Place Chicken Thighs in a mixing bowl. Season with Salt, Pepper, Garlic Herb Seasoning, Cumin, Onion & Garlic Powder and toss Chicken until coated with seasonings.
  • Set aside for 15-20 minutes or so to let flavors marinate into the Chicken. The longer the marinating time, the better the flavor.

Sweet Potatoes

  • In a separate bowl, add Sweet Potato slices, Brown Sugar, Apricot Preserves, pinch of Salt & Pepper to taste, Cayenne (Optional) and toss to coat Sweet Potatoes with ingredients.
  • Spray small baking dish with nonstick spray and line Sweet Potatoes in overlapping formation for presentation being sure to add any leftover goodness in your bowl right over top.
  • Bake in over at 350°F for 30 – 40 minutes or until fork tender.

Multitask

  • While Sweet Potatoes are baking, drizzle a large Skillet with Olive Oil and heat up Skillet on medium just until oil is hot enough to begin searing the Chicken. Place Chicken Thighs skin side down and cook 5-6 minutes then turn over and continue to cook another 5-6 minutes. Skin should be crispy and Chicken should be firm to touch. Cooking time will vary based on the size and thickness of your Chicken.
  • Internal Chicken temperature should be 165°F when completely cooked through.

Roasted Broccoli

  • Place Broccoli Florets in a bowl. Drizzle Olive Oil over it. Add a pinch of Salt, Pepper & Red Pepper Flakes and toss around being sure seasonings are evenly dispersed.
  • Place on nonstick baking sheet and roast at 350°F for 15 minutes or so until golden brown around edges but still maintains some firmness. This can be done at the same time at Sweet Potatoes.. life of a multitasker always works for me.
  • Plate your dishes and enjoy this simple but delicious meal.
