I love all the different cuts of pork chops from bone in to boneless. My choice of Center Cut Pork chops for this dish was simply out of how I was going to present my dish. Visual is just as important to me as taste and if I can make a beautiful presentation, my flavors will make it even more desirable. So if you don’t mind what your dish looks like, then by all means, choose whatever cut your prefer. If you’re happy then so am I. We’ll just be two happy folks enjoying a Sweet & Savory meal that makes us both happy… right?

In creating this dish, I was looking for some way to liven up my meal than just eating a Pork Chop and Brussel Sprouts. Asking myself, what can I do to this meal to make my soul sing and do my happy dance? Yes I said happy dance. Everyone that is a real cook knows that a truly great tasting recipe will have you dancing all around the kitchen. To dance, you have to know how to be a real cook. Instructions

Prep Produce

  • Rinse Brussel Sprouts under water being sure to remove any dirt or residue. No one wants to taste anything that doesn't belong.
  • Slice Brussel Sprouts in half and set aside.
  • Peel and slice White Onion in thin slices and set aside.
  • Peel your apples, core them and chop them up into small bite size pieces.

Prep Center Cut Pork Chops and Maple Bacon

  • Rinse your Chops under water and pat them dry with paper towels.
  • Place them in a bowl.
  • Add Garlic Herb Seasoning, Cumin and a couple pinches of Salt & Pepper depending on how much Salt & Pepper you like.
  • Rub the seasonings into your Chops being sure to get seasonings all over them. Set aside for 15 minutes so that the seasonings marinate into the them.
  • Slice Maple Bacon into small pieces.

Cooking Instructions

  • Heat Skillet or Cast Iron Pan on medium/high.
  • Drizzle some Olive Oil to coat the bottom of the Skillet.
  • Add two tablespoons of Butter.
  • When Skillet is nice and hot and butter is sizzling, gently place Center Cut Pork Chops into Skillet and begin searing for 3-5 minutes on one side until golden brown being sure to get nice browned edges. Flip over and continue searing for another 3-5 minutes to brown other side. Cooking time will vary on the thickness of your Chops but the internal temperature should read 135°F if using a meat thermometer.
  • Remove them from Skillet and set aside on plate to rest. They will continue to cook with the residual heat so be sure not to overcook in Skillet as they will become tough.
  • Place Maple Bacon into Skillet and cook them until almost done.
  • Add another drizzle of Olive Oil and 1 tablespoon of Butter to same Skillet with Bacon.
  • Proceed to place sliced Brussel Sprouts, Sliced Onion and a pinch of Salt & Pepper into Skillet and Sauté them stirring every couple of minutes until tender and cooked through. The flavor of the Maple Bacon will infuse into the Brussel Sprouts giving them a sweet but smokey taste. Remove them from Skillet and set aside on a plate.

Prepare Apple Chutney

  • Place last tablespoon of Butter, Brown Sugar, Dried Cranberries, pinch of Salt & Pepper and chopped Apples into same pan stirring consistently until Apples begin to break down, Dried Cranberries soften and Onions caramelize. All the flavors will meld together creating a wonderful Chutney to place on top of Center Cut Pork Chops.

Plate your dish with a Center Cut Pork Chop and a spoonful or two of Apple Chutney right on top with a generous helping of Maple Bacon Brussel Sprouts along side.

  • I hope you enjoy this simple but flavorful meal.
