Bacon Primavera, a spin off of Pasta Primavera which consist of incorporating a variation of vegetables into a pasta dish. I mean, who doesn’t love Bacon in a plate of pasta? It isn’t set in stone what vegetables to incorporate into this dish. It’s basically what you have on hand that makes this dish Primavera. Some of my common household vegetables include mushrooms, tomatoes & asparagus so that was what I used creating my version of Bacon Primavera.

Pasta comes in all shapes and sizes as well as providing different variations such as whole wheat, multi grain and etc. It’s your choice on what you like and how you like it. I like to keep it pretty simple as I like to incorporate my style of cooking to build my flavor profile. I don’t always need a meat laden plate of pasta even though they are absolutely delicious. Sometimes I just want something light but loaded with fresh vegetables and flavors that I don’t need all the heaviness that we get from eating something hearty.

Pasta with fresh vegetables and bacon makes everything perfect. Sitting in the kitchen dreaming about what will my next meal be. So many options and unlimited possibilities. Just to think diamonds are a girls best friend but let me tell you, food is absolutely mine. I’ve never been so excited to try something new but truth be told, everything I try is new. I’ll let you in on a secret. Never one to follow a recipe so I guess you can say my recipes are inspired by my love for food, ingredients on hand and a light bulb that goes off in my head. Bacon Primavera

Pasta with Bacon & Vegetables

  • Large Skillet
  • Pot
  • Cutting Board
  • Knife
  • Colander

Ingredients
  

Protein

  • 3 Slices of Bacon Thick Cut

Produce

  • 6 Spears of Asparagus
  • 3 Scallions
  • 3 Medium Tomatoes
  • 1 Package of Portabella Mushrooms
  • 1 tbsp Minced Garlic
  • 1/4 cup Cilantro

Pasta

  • 1 Fresh or Package of Linguine

Dairy

  • 3 tbsp Butter
  • 2 cups Heavy Cream

Seasonings

  • 1 tbsp Garlic Herb Seasoning No Salt
  • 1/4 tsp Cayenne Pepper
  • 1 tsp Onion Powder
  • Salt
  • Black Pepper

Oil

  • Olive Oil

Instructions
 

Prep

  • Give a rough chop to your Asparagus Spears being sure to discard the thick stem on the bottom.
  • Dice Scallions. Set aside 1 teaspoon to garnish.
  • Chop Tomatoes
  • Chop Portabella Mushrooms.
  • Chop Cilantro. Set aside 1 teaspoon to garnish.
  • Slice or give a rough cut to Bacon to yield smaller pieces.
  • Set all aside until ready to use.

Pasta

  • Fill your pot halfway with water and heat on medium/high.
  • Add a pinch of salt.

Meanwhile..

  • Heat Skillet on medium.
  • Add Bacon and cook until completely done. Done meaning how you like it. Some like it crispy while others don't. Remove 1 tablespoon or so to garnish and set on top of paper towel to catch any Bacon grease.
  • At this point, add Asparagus, Scallions, Mushrooms, Tomatoes & Minced Garlic into the Skillet with remaining Bacon and Bacon grease.
  • Sauté ingredients to incorporate flavors from Bacon and Bacon grease.
  • Add a pinch of Salt & Pepper and continue sautéing
  • Water should be boiling at this point. Add 1 tablespoon of Olive Oil into water.
  • Add Pasta and cook as directed on package. Suggestion: I use fresh pasta as it cooks faster and taste better. Fresh Pasta can usually be found in the refrigerated isle where you dairy products are located.
  • When Pasta is done, reserve 1 cup of water and set aside.
  • Add Pasta into Skillet with other ingredients and stir.
  • Add Heavy Cream, Garlic Herb Seasoning, Onion Powder, Cayenne Pepper, Salt & Pepper as needed, Cilantro & Butter and continue stirring to incorporate ingredients.
  • Heavy Cream will thicken as it heats up and reduces. You may add more cream if you are looking for a creamier consistency. Keep in mind to adjust seasoning as well.
  • Adding reserved Pasta Water helps to thicken the sauce as well if needed.
  • After a few minutes, your pasta will be done.
  • Suggestion: You may add fresh Parmesan Cheese for additional flavor if you want something more than a hint of Bacon goodness.
  • Plate your Pasta and garnish with reserved Bacon, Scallions & Cilantro and absolutely enjoy your meal!
