Brunch Bagel is my take on Breakfast and Lunch all in one bite. While I’m not much of a breakfast kinda girl, I do occasionally enjoy it from time to time though. I usually spend my mornings with a cup of coffee in my hand, my purse and out the door. Sometimes I just like the simplicity of a breakfast and lunch combo that is quick to make but still fulfilling.
Bagels
Bagels come in all sizes, shapes & flavor profiles. With so many different variations it is never a lost cause in choosing one just for you. What you choose to put on it changes the whole game. You can keep it pretty simple and just top off with butter, cream cheese or a jam. You can explore all the different options from vegetable to meats to make it a more heartier fare which brings us to my Brunch Bagel.
About
Brunch Bagel has a mixture of simple and heartier. Incorporating peppers, onions and cheese to shredded hash browns is a way to elevate them from “mmm” to an “ahhh in just a few steps. While ham is a common staple used in a bagel sandwich, I upgraded it to Prosciutto giving it a fancier look and a better taste. An over medium egg right on top is something everyone must try at some point in their life. Do not, absolutely do not turn your nose up on it until you try it. Biting down through the yolk as its oozing everywhere makes this sandwich so much more indulging and such a great experience. Never be that one that refuses to try something just once in their life. You will miss so many opportunities of enjoying some of the greatest recipes if you do not take a chance on flavor. Try it once and I promise you, Brunch Bagel will be on you menu more often than not.
Brunch Bagel
Equipment
- Skillet
- Cutting Board
- Sharp Knife
Ingredients
Protein
- 4 Slices of Prosciutto
- 2 Fresh Eggs
Produce
- 1/2 Green Pepper
- 1/2 White Onion
- 2 cups Shredded Hash Browns
Dairy
- 1/2 cup Shredded Cheese of your choice
- 3 tbsp Butter
- 2 tbsp Garden Herb Cream Cheese
Seasonings
- Salt
- Black Pepper
Bread
- 2 Bagels of your choice
Oil
- Olive Oil
Instructions
Prep Vegetables
- Dice Green Pepper & White Onion and set aside.
- Squeeze out as much water out of your Shredded Hash Browns as possible. If you are using frozen, thaw out completely prior to squeezing. You want it to be as dry as possible as this is how you will get crispy Hash Browns.
Cooking Instructions
- Heat skillet on medium/high.
- Add a drizzle of Olive Oil and 2 tablespoons of Butter to Skillet.
- Once Olive Oil and Butter begin to sizzle, add diced Green Pepper and Onions and sauté until it begins to soften.
- Add Shredded Hash Browns, another drizzle of Olive Oil and a pinch of Salt & Black Pepper and stir to mix all ingredients together. Using a spatula, press down Hashbrowns into a thin layer and continue to cook.
- After a few minutes, gently peak underneath to see if it has developed a nice golden brown crust. Once it reaches the golden brown crust, flip the potatoes over to brown other side being sure to use the spatula and push Potatoes down into the pan.
- Spread the Shredded Cheese of your choice over the top of Hash Browns and cover.
- Once browned and cheese is melted, remove from Skillet and set aside on a dish.
- Place Prosciutto Slices directly into same Skillet and sear until crispy and remove.
- Add last tablespoon of Butter to Skillet.
- Gently crack both Eggs into Skillet adding a pinch of Salt & Pepper if desired as the skillet will have residual seasonings from previous use and cook them based on your preference. I like mine over/medium so that it is cooked on both sides but still runny in the middle. Something about that yolk oozing over the sandwich as you bite it is just an amazing experience.
Bagel
- Toast your Bagel until nice and crispy.
Prepare your Sandwiches
- Spread Garden Herb Cream Cheese on the top portion of Bagel.
- Divide the Cheesy Hash Browns in two and place on top of bottom half of bagels.
- Layer 2 slices of Prosciutto on top of Hash Browns.
- Place a cooked Egg of your choice over Prosciutto adding the Bagel slathered in Garden Herb Cream Cheese on top for the final touch.
- The sandwich itself is a meal on its own but can be paired with a bowl of fresh fruit or side of your choice.YUM!!
