I discovered the love for Biscoff Cookies also known as Speculoos Cookies while flying the skies on an airplane ride. Free snack turned into an obsession that couldn’t just stop at one. Not your everyday cookie but something about the sweet caramelized, ginger snap flavor delivers something special in every bite. Commonly found in your local market with variations to choose from. The genius idea of creating the Cookie Butter spread also became a hit in the baking world. Creamy spoonfuls of deliciousness all packed in one container. Enjoy it on toast, pancakes, graham crackers, fruit or in my case, a cookie.
A simple snack takes the world by surprise in recreating it in my elevated cookie recipe. While I am not the first to create a recipe and I definitely will not be the last, I can tell you, it is divine all the same.
