Shrimp is something I occasionally like to dabble with and has a lot of potential in different meals. I add them to stir fry’s, sauté them, add them to curry amongst other ways. Todays recipe stems from craving fried Shrimp for the last couple of weeks. Not sure where it stems from but it is a challenge trying to find a great tasting one right off of a menu. They’re either made from frozen, tasteless, rubbery due to over cooking or simply just not good. So I decided to try my hand at making them myself. While I took on the challenge, it was no challenge at all. I was impressed that I created something delicious on the first try.

Using fresh Shrimp versus cooked guarantees a non rubbery Shrimp right out the grease as long as you do not overcook it on your own. Panko Breadcrumps guarantees a crunch in every bite which is imperative on my menu. After having a couple of bad experiences ordering right off of a menu, I gave up. With a little bit of time in the preparation and love in the deliverance, you will have Jumbo Panko Crusted Shrimp in no time. Serve them along side of your favorite side dishes or enjoy them alone for a quick bite. Jumbo Panko Crusted Shrimp

Jumbo Shrimp butterflied, breaded and fried to a crispy golden brown perfection served with a spicy creamy sauce.

Equipment

  • Mixing Bowl
  • Frying Pan or Dutch Oven
  • Pan or Cookie Sheet
  • 3 Small Bowls
  • Cutting Board
  • Knife

Ingredients
  

Seafood

  • 2 lbs Fresh Raw Shrimp Cleaned, Deveined and Butterflied

Flour

  • 1 cup All Purpose Flour

Dairy

  • 2 Large Eggs
  • 2 tbsp Milk

Bread

  • 3 cups Seasoned Panko Breadcrumbs

Seasonings

  • 1 tbsp Garlic Herb Seasoning
  • 1 tsp Dried Thyme
  • 1/2 tsp Smoked Paprika
  • 1/4 tsp Cayenne Pepper
  • Salt

Spicy Mayo Sauce

  • 1/2 cup Mayo
  • 1/4 cup Sour Cream
  • 1 tbsp Sriracha Hot Sauce or Hot Sauce of your Choice
  • 1 tbsp Lemon Juice
  • 1/2 tsp Smoked Paprika
  • Pinch of Salt

Oil

  • Oil of your choice for Frying

Instructions
 

Shrimp Preparation

  • Place all ingredients for Spicy Mayo in bowl and stir until ingredients are incorporated. Cover and place in refrigerator to chill and ready to use.
  • Place cleaned Shrimp in a Mixing Bowl.
  • Add Garlic Herb Seasoning, Thyme, Smoked Paprika, Cayenne Pepper and a couple generous pinches of Salt. Using your hand, give it all a toss being sure to coat each Shrimp with seasoning. Set aside to marinate for a few minutes while getting prep assembly station set up.
  • Place Flour and Panko Breading in two separate bowls.
  • In third bowl, whisk Egg and Milk together until well incorporated.

Shrimp Assembly

  • Line a pan with wax paper or foil to avoid sticking to pan and easy clean up.
  • Toss a few seasoned Shrimp into Flour to coat, then Egg being sure to shake off excess.
  • Toss into Panko Breadcrumbs being sure to press into the crumbs to get a nice coating on them. Place onto lined pan. Continue process until all of the Shrimp are coated and ready to go.

Frying

  • Heat enough Oil in Skillet or Dutch Oven to cover Shrimp while frying until temperature reaches 350°F.
  • Begin frying Shrimp in batches being sure not to overcrowd for 2-3 minutes or until golden brown. Be sure to turn midway. Shrimp cooks very fast so I recommend that you do not walk away from eye view or you risk over cooking or possibly burning them. Remove and place on paper towel lined plate to catch excess oil.
  • Continue onto the next batch and continue the process until all are fried to golden perfection.

Serving

  • Serve with your favorite sides or enjoy them on their own with a small dipping dish of Spicy Mayo created earlier.
    ***Squeeze of fresh Lemon over the Shrimp gives it a fresh citrusy twist.. delicious!!
