  • Large Cast Iron Skillet May use a regular skillet as well.

Ingredients
  

Protein

  • 4-6 Bone In, Skin On Chicken Thighs Cleaned. Can substitute for boneless, skinless or both. Cooking time will vary.

Produce

  • 2 cups Bella Mushrooms Sliced
  • 1 Yellow Onion Sliced Thinly
  • 1 Sweet Bell Pepper Sliced Thinly
  • 3 Tomatoes Chopped or cubed.
  • 2 tbsp Garlic Minced

Pantry

  • 2 tbsp Mushroom Soy Sauce
  • 1 tbsp Cornstarch

Dairy

  • 1 cup Heavy Cream
  • 2 tbsp Butter

Seasonings

  • 2 tbsp Garlic Herb Seasoning No Salt
  • 2 tsp Onion Powder
  • 1 tbsp Cumin
  • 2 tbsp Adobo Seasoning May substitute for your brand of seasoning.
  • 1 tsp Black Pepper

  • Olive Oil

Other

  • Mashed Potatoes Prepared
  • Water

Instructions
 

Chicken Preparation

  • Place Chicken in a Large Zip Lock Bag and drizzle a generous amount of Olive Oil over Chicken.
  • Add 1 tbsp Garlic Herb Seasoning, 1 tsp Onion Powder, Cumin, Adobo Seasoning & Black Pepper. Seal closed. Using your hands, massage ingredients into Chicken being sure to coat throughly. Set aside and let marinade for 30 minutes.
    **this can be prepared the night before and let marinade in refrigerator overnight for better infused flavor.

Cooking Instructions

  • Preheat oven to 350℉.
  • Heat Skillet on medium/high drizzling Olive Oil in skillet to coat.
  • Add Chicken Thighs skin side down being sure not to overcrowd. Sear Chicken for 7-10 minutes or until skin is brown & crispy. Flip over and continue searing for additional 3-4 minutes.
  • Remove Chicken and place directly on baking pan or dish and place in preheated over to continue cooking for additional 15 minutes.

Meanwhile – Gravy

  • Using the same Skillet, add another generous drizzle of Olive Oil & Butter.
  • Add Garlic, Onions & Peppers and begin sautéing until Onions begin to soften and Garlic becomes fragrant. Add Tomatoes and Mushrooms and continue sautéing for additional 5-7 minutes.
  • Lower cooking temperature to Medium.
  • To the Skillet, add Heavy Cream, 1/2 cup of Water, Soy Sauce and remaining Garlic Herb Seasoning and Onion Powder. Stir to incorporate. Bring to a simmer stirring periodically for 5-7 minutes.
  • Create a slurry mixing the Cornstarch with a little bit of cold water. Add to Gravy in pan and continue stirring. Taste Gravy to see if additional seasonings are needed.
    **Heavy Cream thickens on its own so this step may be omitted if desired consistency already achieved.
  • Remove Chicken from over and gentle nestle Chicken in Skillet Gravy. Spoon Gravy over Chicken to coat. Place back into oven and bake addition 5-7 minutes or until Chicken internal temperature reaches 165℉.
  • Remove and let rest until ready to serve.
  • Serve over Mashed Potatoes and enjoy!
