You ever think about all the unused Pasta in the pantry that eventually gets tossed because you never get back to it or simply didn’t use it all in a previous recipe? Mahi Mahi Gone Wild will help to eliminate that problem while delivering a light, tasty and beautiful meal in no time. This recipe is simply what it states, a meal gone wild! Use up any random ingredients leftover in your pantry or refrigerator to create a masterpiece. What does that mean? It means its going to taste pretty darn scrumptious.

Mahi Mahi

Mahi Mahi is a mild and sweet tasting fish. It is a meatier in texture and while some say it has a fishier flavor profile than other white fish such as haddock or cod. I find it a lot milder especially since I am not a strong fish tasting type of person. I like to stay on the milder side of things. It can be enjoyed with a simple seasoning blend of your choice along side a side salad or some roasted vegetables, it will hold up against anything bold such as my recipe Mahi Mahi Gone Wild!

This recipe was created simply to help eliminate some of my panty pasta that wasn’t used up in previous recipes. Rather than tossing it out, I figured out a way to make it work in this recipe. Wild right? Pairing it with some fresh herbs out my garden, some pickled peppers I made fresh and jarred as well as condiments in my fridge and here we have it. Mahi Mahi served over a combination of classic pasta in a light but robust sauce all the same. A light tasting beautiful meal on the table as simple as that.

Mahi Mahi Gone Wild

Pan seared Mahi Mahi served over a Pasta mixture of Tomatoes, Garlic, Marinated Artichokes, Peppers, Cilantro & Basil.

Ingredients
  

Seafood

  • 6 Mahi Mahi Filets

Produce

  • 2 Packages of Cherry Tomatoes Cut in half
  • 5 Garlic Cloves Minced
  • 1 cup Green or Red Peppers (or both) Sliced in strips. I used pickled peppers I made right out of my garden.
  • 1 cup Marinated Artichoke Hearts with Oil Give them a rough chop.
  • 2 tbsp Capers
  • 1/4 cup Cilantro Chopped
  • 4 Fresh Basil Leaves Sliced in slivers. May substitute for Dry Basil.

Condiment

  • 2 tbsp Lemon Juice May use juice from fresh lemon.

Dairy

  • 1/4 cup Butter
  • Parmesan Cheese (Optional)

Oil

  • 1/2 cup Olive Oil

Seasonings

  • 2 tbsp Garlic Herb Seasoning No Salt
  • 1 tbsp Onion Powder
  • 2 tbsp Italian Style Sofrito Blend Trader Joes
  • 2 tbsp Cuban Style Citrusy Garlic Seasoning Blend Trader Joes
  • Salt
  • Black Pepper

Pasta

  • 16 oz Favorite Pasta This is your time to clear out your leftover dry Pasta in your pantry. This is a gone wild recipe so a mixture of Pasta fits the profile and eliminates all the unused Pasta you never got back to.

Instructions
 

Mahi Mahi Preparation

  • Lay Mahi Mahi Filets on a cutting board. Season both sides of Mahi Mahi with 1 tablespoon each of Garlic Herb Seasoning, Italian Style Sofrito Blend & Cuban Style Citrusy Garlic Seasoning Blend and set aside to allow the seasonings to infuse into the fish.

Pasta

  • Heat a pot of Salted water to boiling. Cook Pasta according to package or if you are using a variety of leftover Pasta in your pantry, please keep in mind cooking times for each as it may vary. When Pasta is done, reserve 1 cup of Pasta water and drain the rest. Run Pasta under cold water to stop the cooking process.

Meanwhile… prepare sauce

  • Heat deep Skillet on medium/high.
  • Drizzle some Olive Oil in skillet and add minced Garlic stirring consistently until fragrant.
  • Add Tomatoes, Peppers, Artichokes with Oil and Capers. Simmer until Tomatoes and vegetables begin to soften and juices release stirring periodically.
  • Add Butter, Olive Oil, Lemon Juice, remaining Garlic Herb Season, Onion Powder, Italian Style Sofrito Blend, Cuban Style Citrusy Garlic Seasoning Blend and a generous pinch of Salt & Black Pepper. Continue to stir to incorporate flavors. Lower cooking temperature to medium and continue a low simmer while preparing Mahi Mahi.

Mahi Mahi

  • Heat Skillet on Medium/High adding a drizzle of Olive Oil.
  • Gently place Mahi Mahi in Skillet and sear on one side for 4 minutes undisturbed until browned on the bottom. Flip over and continue cooking for additional 2-4 minutes more or until completely done. Cooking time will vary on the thickness of the Mahi Mahi. Mahi Mahi is a meatier textured fish so be sure not to overcook as it will make it extremely dry. Set pan aside until Pasta assembly.

Bring it all together

  • Place Pasta in sections directly into sauce since all Pasta may or may not be used depending on how much you are looking to make and how much sauce you have to utilize. Using tongs, give it a good toss being sure to coat the Pasta thoroughly. Add Cilantro and Basil and give it another toss to incorporate flavors. If you are looking for a little bit of a saucier version, you can add the reserved Pasta liquid at this point and toss in. Give it a taste to see if additional seasoning needed at this point.
  • Place Pasta mixture on a serving dish, topped off with Parmesan Cheese (optional) and lay Mahi Mahi right over the top.
  • Serve with some crusty warm bread and enjoy!!
