
Need I say more! Salmon Bombs are an explosion of flavor wrapped up all in one. Juicy flaky Salmon encapsulates a filling of tender Collard Greens, Onions, Tomatoes, Garlic and Jalapeño & Artichoke creamy goodness. Baked to perfection in no time.
Salmon is a common fish that is known for its high protein and omega-3 fatty acids. I find it rich in flavor comparable to umami and provides a mild buttery, rich and lightly sweet taste. Salmon has a higher fat content so simply put, more flavor. There are different varieties of Salmon ranging in taste but the most commonly found in local stores is the Atlantic Salmon, Sockeye and Coho.
Salmon Bombs is created using Atlantic Salmon also known as farm raised. It is easily accessible for me and carries a milder taste which I do love. Looking to create something different, I decided to stuff them with ingredients I already had in the refrigerator. While it is not common ingredients in an average household, I always pick up random items to try in the store and had just went shopping so why not? Sautéed up some heart Collard Greens with Onions, Garlic & Tomatoes to start. What do I do? Add some creamy goodness to it to mimic creamed Spinach and viola, it works amazingly.
Salmon Bombs compliments a Baked Sweet Potato perfectly but can be enjoyed with steamed Rice or any of your favorite side dishes. Can also be enjoyed on their own simply because they are filled with so much goodness, I mean who needs sides when they are all in one.

Salmon Bombs

- Cast Iron Skillet

Ingredients
Seafood
- 2 lbs Salmon Skinless and sliced into 6-8 slices.
Produce
- 10 oz Cherry Tomatoes Cleaned and stems removed if they have them.
- 1 Yellow Onion Sliced thinly.
- 5 cups Collard Greens Chopped.
- 2 tbsp Garlic Minced.
Dairy
- 1/2 cup Garlic & Herb Spreadable Cheese
- 1/2 cup Artichoke & Jalapeño Dip
- Parmesan Cheese Optional
Seasonings
- 2 tbsp Garlic Herb Seasoning No Salt
- 2 tsp Onion Powder
- 1 tbsp Adobo May substitute for your brand of Seasoned Salt. Adjustments may be necessary depending on brand and preference. For Salmon.
- 1 tsp Adobo For filling.
Oil
- Olive Oil
Instructions
Preparation
- Place Sliced Salmon in a Bowl. Add 1 tbsp Garlic Herb Seasoning, 1 tsp Onion Powder and 1 tsp Adobo. Using your hands, gently toss and massage ingredients into the Salmon being sure to coat thoroughly on all sides. Set aside to marinade.
Filling
- Heat Skillet on Medium/High. Drizzle Olive Oil to coat skillet.
- Add Onions & Collard Greens and begin sautéing until begin to soften.
- Add Garlic, Tomatoes, additional drizzle of Olive Oil, 1 tsp Adobo, 1 tbsp Garlic Herb Seasoning and tsp of Onion Powder. Stir to incorporate ingredients and continue to sauté for 10-12 minutes or until Collard Greens are completely tender.
- At this point, you will add remaining ingredients of Garlic & Herb Cheese Spread & Artichoke and Jalapeño Dip. You may also add a couple spoons of Parmesan Cheese if you are using. Stir in incorporate and heat through until Spread and Dip is melted into mixture. Taste to see if additional seasonings needed but be mindful that the Salmon also has seasonings on it. Turn off heat and set aside to cook down for a few minutes.
Salmon Bombs
- Heat Oven on 375℉.
- Spray your Cast Iron Skillet with non stick spray.
- Place a slice of Salmon on Cutting Board. Using a paring knife, gently slice Salmon down the middle from top to bottom but to not slice completely to the end leaving it attached.
- Spoon the Filling mixture into the center. Roll Salmon up or around the Filling almost like a pinwheel. Secure with a toothpick and place into Cast Iron Skillet.
- Continue this process until all the Salmon Bombs are created.
- If there is leftover filling, using your spoon or fingers, place on top of Salmon being sure to gently push filling in for added goodness.
- Place in oven and bake for 15-20 minutes or until Salmon is cooked completely or to your liking.** The last 2-3 minutes – I broil it to crisp up to top part of filling for a little crisp.
- Remove and set aside until ready to serve.
- Serve with Baked Sweet Potatoes or your favorite side dish. Enjoy.
