Shrimp Concoction Pasta is a meal brought together using whatever ingredients I have on hand. This is a perfect opportunity to take those leftover vegetables you have sitting in the fridge that you simply want to use up before having to toss them. Sautéing them with some good oil and assortment of seasonings brings everything all together perfectly.

Creating Concoctions

Concoctions have always been a meal or two usually on a monthly basis. These meals have been an eventful journey since I never know what the end result will be. While I question myself sometimes if something is really going to work, my skills at cooking has never failed me. Concoctions have been my go to on many occasions while my kids were growing up and have since become their favorite requests over the years. They are all grown and have flown the coop and still rush over when I cook a concoction.

Shrimp & Pasta

I love Shrimp and it will always have a place in my home. Never a dull moment with so many ways to cook them. They can be fried, seared, baked, broiled, grilled & BBQ’d amongst many other ways you choose to cook them. It’s a quick addition to any meal or can be enjoyed alone.

Today I will share with you a simple Shrimp Concoction Pasta that will have you wanting to create your own version of a Concoction Pasta. Concoctions aren’t limited to just Pasta, it’s what you have on hand and what you choose to do with it that makes it so.

Shrimp Concoction Pasta

Pasta with assorted Fresh Vegetables, Cheese and Succulent Shrimp.

Equipment

  • Deep Skillet or Pan with Lid
  • Pot
  • Cutting Board
  • Knife
  • Bowls
  • Strainer/Colander
  • Serving Dish or Platter

Ingredients
  

Seafood

  • 12 Extra Large Cleaned Raw Shrimp

Produce

  • 1 Package of Cherry Tomatoes
  • 1 Large White Onion
  • 1 Package of Fresh Spinach
  • 1 Package Fresh Portabella Mushrooms whole or pre-sliced.
  • 3 Scallion Onions
  • 1 Small Package Fresh Basil
  • 2 tbsp Minced Garlic

Dairy

  • 1 Package Fresh Mozzarella
  • 6 tbsp Butter

Condiment

  • 1/4 cup Pitted Spanish Green Olives

Oil

  • Olive Oil

Seasonings

  • 1 tbsp Garlic Herb Seasonings
  • 1 tsp Onion Powder
  • 1/2 tsp Lemon Pepper
  • Salt
  • Black Pepper

Pasta

  • 1 Package of Fresh Linguine or Boxed if you prefer.

Instructions
 

Preparation

  • Be sure to wash Cherry Tomatoes, wipe dirt off of Mushrooms, Peel Onion and give Fresh Spinach a good rinse using a Strainer/Colander.
  • Slice Cherry Tomatoes in half and place in a bowl.
  • Give Mushrooms a rough chop if whole and place into bowl with Cherry Tomatoes.
  • Slice Onion to thin slices or if you prefer smaller pieces, give it a good chop and also place in the same bowl.
  • Be sure the Shrimp is clean and deveined. Can use fresh or frozen, just be sure to unthaw completely. Place in a separate bowl than vegetables.
  • Slice Fresh Basil & Scallions into thin slivers and set aside.

Pasta

  • Bring a pot of water, a pinch of Salt & 1 tablespoon of Olive Oil to a boil and begin to cook Pasta following the directions on the box. Keep in mind, if you are using Fresh Pasta, it tends to cook faster then boxed. Stir periodically so Pasta does not stick to each other.

Meanwhile

  • Heat Skillet or Pan on medium/high.
  • Drizzle some Olive Oil in the pan.
  • Add two tablespoons of Butter and bring to a sizzle.
  • Begin to sauté Tomatoes, Onion, Mushrooms , Minced Garlic & Green Olives until it begins to soften and becomes fragrant.
  • Add Garlic Herb Seasoning, Onion Powder, pinch of Salt & Pepper and stir into the Sautéed Vegetables. Turn the heat on burner down to low while preparing Shrimp.

Shrimp

  • Add a pinch of Salt & Pepper and Lemon Pepper to the bowl with Shrimp. Using spoon or hand, mix ingredients into Shrimp being sure seasonings are dispersed. Let them sit for a few minutes while the Pasta finishes cooking.

Finish Pasta

  • Once Pasta is cooked to al dente, reserve 1 cup of Pasta water and set aside. Drain Pasta into Strainer/Colander.
  • Place Pasta directly into the Skillet with Sautéed Vegetables.
  • Add Fresh Spinach, Salt & Pepper to taste, 3 tablespoons Butter, Pasta water & drizzle of Olive Oil and stir to incorporate all ingredients. Spinach will begin to reduce in size, wilt and turn tender. Stir in half of Fresh Mozzarella pieces and place the rest over top of Pasta. Taste to be sure there is enough seasoning and adjust accordingly. Cover with lid and let it sit, melting the Cheese while finishing up Shrimp.

Cook Shrimp

  • Heat a small Skillet on medium/high adding 1 tablespoon of Butter and a drizzle of Olive Oil.
  • Once Butter is melted and sizzling, gently add Shrimp in and sear 2-3 minutes on each side until pink and cooked through. Be careful not to overcook as it will turn chewy. You want it to be juicy and succulent.

Plate Your Dish

  • Scoop a generous portion of Pasta onto your dish being sure to get the assortment of Vegetables and melted Cheese.
  • Place seared Shrimp right over top of Pasta, garnish with fresh Basil and chopped Scallions.
  • While it seems a lot of steps to do, the end result is totally worth it.
