Some people cringe when you mention Oxtails not understanding the deliciousness behind them succulent bones. Don’t knock em’ until you try them. Add some Butter Beans & Cornbread with it, and it’s a match made in heaven!!

It’s not common finding large packages of Beef Short Ribs or Oxtails in my local grocery store. Sometimes I find one but not the other. Most times I don’t even find them at all. When I do find them they always seem to be a bit on the pricier side of things so I improvise. By using both, I was able to save money and create this Crockpot meal which has in turn, turned into one of my favorite meals of all. Adding the Butter Beans in gives it some extra love and like I say, I have enough love to go around. With all that said and done, here we are with Oxtails & Beef Short Ribs Crockpot Style. Oxtails & Beef Short Ribs in a Crockpot

Ingredients
  

Meat/Protein

  • 1 lb Oxtails
  • 1 lb Beef Short Ribs
  • 2 cans Butter Beans

Produce

  • 1 White Onion Sliced
  • 1 Sprig Rosemary
  • 4 Garlic Cloves Minced/Chopped

Seasonings

  • 2 tbs Garlic Herb Seasoning No Salt
  • 1 tsp Onion Power
  • 1 tps Cumin
  • Salt
  • Black Pepper

Baking & Spices

  • 1 tbsp Cornstarch

Oil

  • 2 tbs Olive Oil

Instructions
 

  • Rinse Oxtails and Beef Short Ribs thoroughly and dry as much of the water off as possible.
  • Place Oxtails in Crock Pot Container and add Garlic Herb Seasoning, Onion Power, Cumin, Salt & Black Pepper and Olive Oil.
  • Using your hand, rub all the ingredients into the meat being sure everything is coated with the seasonings.
  • Cover and let the meat sit in crockpot for 20-30 minutes to let the seasonings absorb into the meat.
  • Open and add Butter Beans and juice directly into the crockpot and stir.
  • Add 1/2 cup of water.
  • Add sliced Onions, Rosemary & Cornstarch and stir.
  • Cook on low for 6 hours or until Oxtails & Beef Short Ribs are fork tender and falling off the bones.
  • Cooking time will vary based on thickness of the meat. Midway through cooking time, stir and adjust seasonings as needed. If liquid hasn't thickened to a gravy consistency, mix 1 teaspoon of additional Cornstarch into a couple tablespoons of cold water then proceed to add into hot liquid and stir. Continue the slow cooking process.
  • This can be served with some good ole fashion Cornbread on the side or on top of some white rice for added goodness.
