Curry dishes are known for their warm spices used and while not all dished are prepared the same, they all have something in common, love. Depending on the dish you are creating will determine how mild or strong of a Curry taste you are looking to develop. Beef and Sweet Potato Curry Stew is a mild tasting recipe using Yellow Curry which I find to be the mildest of all Curry seasoning.

Curry Powders commonly consists of turmeric, cumin, ginger and black pepper. While I mention Powders, they are also available as a paste. Indian and Thai are some of the common ones used and have their distinctive twist on it. I often focus on the Thai version as it utilizes Coconut Milk along side the warm seasonings. Often times the spices are bloomed prior to using to allow the flavors to develop. If you are not looking for a strong tasting Curry dish, you can absolutely skip this step. I was opting for a mild dish as the seasonings can be a bit over powering so I omitted the blooming process.

Beef and Sweet Potato Curry Stew can be enjoyed alone or along side some steamed White Rice. Tender morsels of Beef, Sweet Potatoes, Onions, Peppers and Beans compliment each other in a thick broth. With a hint of flavoring of Coconut Milk that is used for the base of this amazing dish and a light essence of the Curry flavor, it couldn’t have been any perfect. Perfect for a quiet evening, a good movie and a warm belly.

Beef and Sweet Potato Curry Stew

  • Deep Pot or Dutch Oven with Lid

Ingredients
  

Protein

  • 1 lb Beef Cubes Cut into smaller pieces.

Produce

  • 1 Sweet Potatoes Peeled and cubed.
  • 1 Yellow Onion Sliced thinly.
  • 1 Green Pepper Sliced thinly.
  • 6 Garlic Cloves Minced.

Canned Goods

  • 1 can Red Beans
  • 2 cans Coconut Milk

Seasonings

  • 1 tbsp Garlic Herb Seasoning No Salt.
  • 1 tsp Onion Powder
  • 1 tsp Cumin
  • 1 tsp Thyme
  • 2 tbsp Yellow Curry Bloom prior to use if looking for a stronger taste.
  • 2 tsps Adobo
  • 2 packets Sazon Seasoning For coloring.

Oil

  • Olive Oil

Other

  • 2 cups Water

Instructions
 

Preparation

  • Heat deep pot or Dutch Oven on medium/high drizzling Olive Oil to coat.
  • Add cubed Beef and begin to brown on all sides.
  • Add Garlic Herb Seasoning, Onion Powder, Cumin and 1 tsp of Adobo. Stir to incorporate and continue browning.
  • Gently add Sweet Potatoes, Peppers, Onions, Garlic, Curry Powder, 1 tsp Adobo, Sazon Packets and Beans. Stir and continue cooking until vegetables begin to soften and Garlic becomes fragrant.
  • Add both cans of Coconut Milk and Water. Stir being sure all ingredients are mixed together. Cover with a lid and lower cooking temperature to medium. Let it simmer stirring periodically for 30-40 minutes or until the Beef and Sweet Potatoes are fork tender. Midway, you may taste to see if additional seasonings are needed.
  • Serve over steamed white rice and enjoy.
