Another addition to my favorite Seafood Menu. I say favorite, because lately all of my Seafood dishes have been leaving a mark on my soul that is just so unforgettable. Brown Sugar Teriyaki Salmon & Vegetables, if the picture didn’t sell the goodness than I don’t know what more I can say.

Salmon is one of those fish that can be prepared sweet or savory or if you are like me, I can have both in one sitting. More importantly, the health benefits of eating Salmon are beneficial to all who enjoy it. It’s low in Saturated Fat and carries a good source of protein, full of Vitamin B12 and Omega 3’s which does the body good!

Brown Sugar Teriyaki Salmon & Vegetables was simply created not by a recipe but by having a run in my kitchen of what I had on hand and what my soul was wanting. I was looking for a little sweetness but not overly and something to put over rice to give it some flavor. With a refrigerator full of fresh vegetables, everything just came together. While the Teriyaki sauce is a bit sweet which you can totally lessen the Brown Sugar & Honey in the recipe, pairing it with the white rice, fresh cucumber slices and avocado just balanced everything out immaculately.

Enough of me taking about it. You will only understand what I’m saying when you get into your own kitchen and create the magic. Let’s cook!

Brown Sugar Teriyaki Salmon & Vegetables

Ingredients
  

Seafood

  • 4 5oz Fresh Skinless Salmon Pieces

Produce

  • 1 Green Bell Pepper Sliced thinly
  • 1 Red Bell Pepper Sliced thinly
  • 1 White Onion Sliced thinly
  • 1 cup Fresh Broccoli Florets Cut into smaller pieces

Seasonings

  • 1 tbsp Garlic Herb Seasonings No salt
  • Salt
  • Black Pepper
  • Sesame Seeds Optional

Marinade for Salmon

  • 1 tbsp Brown Sugar
  • 1/4 cup Soy Sauce
  • 1 tsp Smoked Paprika
  • 1 tsp Salt
  • 1 tsp Black Pepper

Teriyaki Sauce

  • 1/2 cup Soy Sauce
  • 2 tbsp Brown Sugar
  • 1 tbsp Minced Garlic
  • 1 tbsp Honey
  • 1 tbsp Sesame Oil
  • 2 tbsp Rice Vinegar
  • 1/2 cup Water
  • 1 tbsp Cornstarch

Oil

  • Olive Oil

Instructions
 

Salmon Preparation

  • Place all the ingredients for Marinade in a large Zip Lock Bag.
  • Add Salmon into the bag with ingredients and seal.
  • Using your hands, gently massage ingredients into the Salmon being sure to coat everything. Set aside and let marinade for minimum 30 minutes. For better flavor, this step can be prepared the night before and placed in refrigerator overnight.

Preheat Oven to 350°F

  • Spray Baking Sheet/Pan with non stick spray or you may line pan with Aluminum Foil for easy clean up.
  • Place Salmon on Baking Sheet/Pan spaced apart and bake for 15 minutes or until desired doneness. I like to raise oven temperature to Broil last 3-5 minutes to get the marinade a little charred but that's just me.

Meanwhile Prepare Vegetables

  • Heat Skillet on Medium/High with a drizzle of Olive Oil
  • Add your Vegetables and begin sautéing.
  • Proceed with adding your Garlic Herb Seasoning and a generous pinch of Salt & Pepper and continue sautéing until Vegetables begin to soften. You will still want them to maintain some crispness unless you prefer them otherwise.

Meanwhile Cooking Vegetables

  • In a mixing bowl, mix all the ingredients for the Teriyaki Sauce using a whisk being sure all ingredients are incorporated.
  • Add directly to Skillet with Vegetables and continue to stir. Sauce will thicken quickly so keep stirring so that it doesn't burn. Once thickened, remove Skillet from heat source until ready to use. If sauce is too thick, you may add a splash a water at a time to thin out. If you are looking to have additional Teriyaki Sauce, you may double the recipe.
  • Salmon should be done at this point if you have not removed from oven yet.

Plating

  • This dish is best served over White Rice and a side of fresh Cucumbers and sliced Avocado on the side. It sounds crazy but it is absolutely refreshing and pairs well with the Sweetness of the sauce. Sprinkle some Sesame seeds over top (Optional) and Enjoy!
