Ok.. maybe it doesn’t have that crunch of a hard taco or a warm tortilla shell but that’s ok. It’s not what’s on the outside that matters, it’s what’s inside that counts. Sound familiar? Lettuce wraps have been the crave of eating healthy while not sacrificing the love of your favorite fillings and toppings all over the world. With so many options to choose from..you are provided an unlimited ability to create whatever you want, however you want and still keep it low in calories and high in flavors. It’s kind of like a salad on overdrive. Chipotle Lettuce Wraps was inspired in my kitchen simply because I had these ingredients on hand. Call it my brainstorming on a whim, I just wanted something quick and easy and on a short notice. What took me by surprise was it actually came out full of flavor and believe it or not, I did not miss the crunch of a hard taco or a warm tortilla shell. I got exactly what I set out to create. A healthy Chipotle inspired taco (lettuce wrap) right out the comfort of my home with all my favorite toppings. Who can ask for more? Enough about my inspiration on a whim. Chipotle Lettuce Wraps

Equipment

  • Skillet
  • Strainer

Ingredients
  

Meat

  • 1 pound Lean Ground Beef

Produce

  • 1 Package of Butter Lettuce Leaves
  • 2 Large Tomatoes
  • 2 Hass Avocados
  • 1 Lime

Dairy

  • 1 Package of Mexican Blend Shredded Cheese
  • 1 Container Sour Cream

Condiment

  • 1 Can of Chipotle Peppers

Seasonings

  • Salt
  • Black Pepper
  • 1 tbsp Garlic Herb Seasoning
  • 1 tsp Onion Power

Instructions
 

Preparation

  • Gently separate Butter Lettuce leaves and rinse thoroughly under water using a Strainer. Set aside on paper towels to dry.
  • Dice Tomatoes and set aside.
  • Peel and slice Avocado thinly. Squeeze half of Lime over Avocado to keep it from browning.

Cooking Directions

  • Begin browning Lean Ground Beef in heated Skillet on Medium.
  • Add Salt & Pepper to taste, Onion Power & Garlic Herb Seasoning.
  • Stir to incorporate seasonings and continue browning until Ground Beef is almost cooked through.
  • Add 1 tablespoon of Chipotle Peppers. Depending on if you are able to find it already chopped or diced, you may have to do this step yourself. If you find that it does not have enough spice, you can add more. If you feel 1 tablespoon is a bit much, feel free to start off with a smaller amount. You can always add more but not subtract it so think about how much spice level you can handle. A little tends to go a long way.
  • Mix ingredients and finish browning Ground Beef until completely done.
  • Set aside to cool down as the heat will cause Butter Lettuce Leaves to wilt if assembled too soon.

Assemble Wraps

  • Start by placing Butter Lettuce leaf down laying flat. If you cannot find large leaves, you may overlap a couple to create a nice size pocket.
  • Spoon Ground Meat Mixture onto leaf.
  • Add some Diced Tomatoes, Shredded Cheese, a couple slices of Avocado & a dollop of Sour Cream.
  • Continue assembling others.
  • Squeeze some fresh Lime Juice over top to add some bright freshness to them.
  • Grab lit ike a taco and dig in… Yum!
  • Suggestion: You may add some Salsa or Taco Sauce for added flavor.
