I always considered Pork to be the other white meat. While I don’t eat a lot of it, when I do, I make sure it is totally worth it. There are many different types of Pork options available ranging from the shoulder, tenderloin to ribs and chops with many in between. With so many options comes many recipes. The idea behind it is to make sure you know how to cook it and to cook it with love.

Mojo is basically a herb concoction consisting of different flavors melding into one. While there are a variety of store bought selections, it is a simple task to just create your own. It is commonly used as a marinade for different types of meat but can also be used as a sauce as well.

Citrus Mojo Pork infuses bright flavors of Orange & Lime Juice with fresh Garlic & Herbs. With the addition of warm spices, this combination creates a wonderful marinade for your favorite choice in Pork. The key is too marinade it as long as possible to work its magic. Be sure to give it minimum 3 hours or for a better result, prepare it the night before and give it an overnight infusion. Once you begin the cooking process, you will thank me later. Citrus Mojo Pork

Ingredients
  

Protein

  • 2 lbs Pork Shoulder Sliced into even sections. May substitute for Country Style Ribs or Pork Chops of your choice. Cooking time will vary.

Produce

  • 1 Orange
  • 1 Lime
  • 10 Garlic Cloves Minced
  • 1/2 cup Cilantro Chopped

Condiments/Juice

  • 1/2 cup Orange Juice
  • 1/2 cup Lime Juice

Seasonings

  • 1 tbsp Cumin
  • 1 tsp Coriander
  • 1 tbsp Thyme
  • 1 tsp Onion Powder
  • 1 tbsp Adobo
  • 1 tsp Black Pepper

Oil

  • 1/2 cup Olive Oil

Instructions
 

Marinade Preparation

  • Place Pork into a large Zip Lock Bag.
  • Add all ingredients into bag along with squeezing fresh Orange and Lime directly in.
  • Seal the bag and using your hands, massage the ingredients into the Pork. Place sealed bag into the refrigerator to marinade for a few hours. This step can also be done the night before allowing it to marinade overnight for a better infused flavor.

Pan Sear

  • Preheat oven to 325°F.
  • Heat Cast Iron Skillet on Medium/High.
  • Place marinated Pork pieces onto Skillet in a single layer. Pour a bit of the marinade over Pork for additional flavor.
  • Sear for 2-3 minutes on each side to seal the juices inside of Pork and begin the cooking process.
  • Cover with tinfoil.
  • Bake in oven for 20-30 minutes or until Pork is tender and internal temperature reaches 145-150°F. Cooking time will vary on the size of your Pork pieces. Be careful not to overcook as this will dry out the meat.
  • Remove from oven and allow to rest for 5 minutes or so before serving.

Serving

  • Serve Mojo Pork over a simple mixture of sautéed vegetables to keep it on the healthier side of things or serve it along side your favorite side dishes. Enjoy.
