Citrus Mojo Pork
Pork marinated in an Orange/Lime Citrus Mojo infused with Cilantro, fresh Garlic, Orange Juice and a variety of warm spices.

- 2 lbs Pork Shoulder Sliced into even sections. May substitute for Country Style Ribs or Pork Chops of your choice. Cooking time will vary.
Produce
- 1 Orange
- 1 Lime
- 10 Garlic Cloves Minced
- 1/2 cup Cilantro Chopped
Condiments/Juice
- 1/2 cup Orange Juice
- 1/2 cup Lime Juice
Seasonings
- 1 tbsp Cumin
- 1 tsp Coriander
- 1 tbsp Thyme
- 1 tsp Onion Powder
- 1 tbsp Adobo
- 1 tsp Black Pepper
Marinade Preparation
Place Pork into a large Zip Lock Bag.
Add all ingredients into bag along with squeezing fresh Orange and Lime directly in.
Seal the bag and using your hands, massage the ingredients into the Pork. Place sealed bag into the refrigerator to marinade for a few hours. This step can also be done the night before allowing it to marinade overnight for a better infused flavor.
Pan Sear
Preheat oven to 325°F.
Heat Cast Iron Skillet on Medium/High.
Place marinated Pork pieces onto Skillet in a single layer. Pour a bit of the marinade over Pork for additional flavor.
Sear for 2-3 minutes on each side to seal the juices inside of Pork and begin the cooking process.
Cover with tinfoil.
Bake in oven for 20-30 minutes or until Pork is tender and internal temperature reaches 145-150°F. Cooking time will vary on the size of your Pork pieces. Be careful not to overcook as this will dry out the meat.
Remove from oven and allow to rest for 5 minutes or so before serving.
