Garlic Herb Tofu & Vegetable Pasta is a light creamy based Pasta dish that is enjoyable on any day of the week. It’s simple, delicious and on the table in as much time it takes you to prep, multi-task and deliver your finished dish! Easy right? The idea behind it is to keep it simple and just let your hands do their magic.

Tofu – you either love it or you don’t. The secret to loving it is to simply make it yourself. I’ve had my fair share at trying different styles of Tofu prepared by others and it has absolutely turned my nose and ruined my vision of eating Tofu and actually enjoying it. Who would have thought that one day I would be creating a recipe that includes what….TOFU? What made it even more shockingly was the fact that I aced it on my first try. Infusing some Garlic Herb flavors into each morsel and crisping it up in the oven was all it needed – well besides needing me of course.

Creating a cream sauce and in this case a Tomato cream sauce full of flavor blending juicy tomatoes and delicious heavy cream to create a light balance sauce and adding sauteed vegetables for a healthy twist with a light crisp brings everything together in one dish. I love pretty much anything Pasta related and enjoy taking a turn at new recipes any chance I get.

Garlic Herb Tofu & Vegetable Pasta

Pasta with Mushrooms, Onions, Asparagus & Garlic Herb Tofu in a Tomato Cream Sauce

  • Deep Pot
  • Large Skillet

Ingredients
  

Produce

  • I Package Portabella Mushrooms Cleaned and given a rough chop
  • 1 Bunch of fresh Asparagus Cleaned and sliced to bite size pieces with bottom ends tossed out
  • 1 Yellow Onion Sliced thinly
  • 1 28oz San Marzano Peeled Tomatoes or Tomatoes of your choice Diced, mashed or blended depending on your preference in texture of sauce. I went with diced for some texture
  • 1 tbsp Minced Garlic
  • Parsley for garnish

Protein

  • 1 Package of Extra Firm Tofu Pressed & Water Removed. Cut into bite size pieces. This may be prepared the day before and kept in refrigerator to save some time.

Dairy

  • 2 cups Heavy Cream
  • 2 tbsp Butter
  • 1/4 cup Parmesan Cheese or cheese of your choice

Seasonings/Baking

  • 2 tbsp Garlic Herb Seasoning No Salt
  • 1 tsp Onion Powder
  • 1 tbsp Adobo Seasoning
  • Salt
  • Black Pepper
  • 1 tbsp Cornstarch

Pasta

  • 1 16oz Package thin Spaghetti Or Pasta of your choice

Oil

  • Olive Oil

Instructions
 

Tofu Preparation

  • Preheat oven to 375°F
  • Place diced pressed (water removed) Tofu into a Bowl.
  • Add a drizzle of Olive Oil, 1 tablespoon of Garlic Herb Seasoning, a couple pinches each of Salt & Black Pepper and Cornstarch. Gently toss Tofu to incorporate all the Oil and Seasonings being sure everything is coated.
  • Let it rest for 15-20 minutes to allow some flavor to get into the Tofu.
  • Place on baking sheet in an even layer. Bake for 25-30 minutes or until Tofu is deeply golden and a little crispy on edges. Be sure to toss Tofu around midway through baking time. Remove and set aside.

Meanwhile – Pasta

  • Bring a Pot of Salted water to a boil. Cook Pasta according to package. Reserve 1-2 cups of Pasta water before draining the rest.

Pasta Sauce Preparation

  • Heat a large Skillet on medium high adding 1 tablespoon of Butter and a drizzle of Olive Oil.
  • Add chopped Mushrooms, sliced Asparagus & Onions and begin sautéing.
  • Add a pinch of Salt & Pepper and continue sautéing until vegetables begin to soften. At this point, remove from heat source and place on a dish and set aside.
  • Add Tomatoes and liquid to Skillet and begin simmering.
  • Proceed adding 1 tablespoon of Garlic Herb Seasoning, Onion Powder, Adobo, Minced Garlic & a couple pinches of Black Pepper and continue stirring.
  • Gently pour the Heavy Cream into the pan and stir consistently. At this time add 1 tablespoon of Butter, your cooked Vegetables back into Skillet stirring until the sauce begins to thicken.
  • Place your cooked Pasta directly into the sauce giving it a good toss. Add your Parmesan Cheese and 1 cup of Pasta water and continue tossing being sure the sauce coats everything. You may add more Pasta water if needed.
  • Give your Pasta a taste to check if additional seasonings are needed.
  • Toss your Garlic Herb Tofu right into Pasta and give it an additional toss.
  • Serve Pasta immediately with a garnish of fresh Parsley and a side of Garlic Bread.
  • Enjoy!!
