Produce
- I Package Portabella Mushrooms Cleaned and given a rough chop
- 1 Bunch of fresh Asparagus Cleaned and sliced to bite size pieces with bottom ends tossed out
- 1 Yellow Onion Sliced thinly
- 1 28oz San Marzano Peeled Tomatoes or Tomatoes of your choice Diced, mashed or blended depending on your preference in texture of sauce. I went with diced for some texture
- 1 tbsp Minced Garlic
- Parsley for garnish
Protein
- 1 Package of Extra Firm Tofu Pressed & Water Removed. Cut into bite size pieces. This may be prepared the day before and kept in refrigerator to save some time.
Dairy
- 2 cups Heavy Cream
- 2 tbsp Butter
- 1/4 cup Parmesan Cheese or cheese of your choice
Seasonings/Baking
- 2 tbsp Garlic Herb Seasoning No Salt
- 1 tsp Onion Powder
- 1 tbsp Adobo Seasoning
- Salt
- Black Pepper
- 1 tbsp Cornstarch
Pasta
- 1 16oz Package thin Spaghetti Or Pasta of your choice
Tofu Preparation
Preheat oven to 375°F
Place diced pressed (water removed) Tofu into a Bowl.
Add a drizzle of Olive Oil, 1 tablespoon of Garlic Herb Seasoning, a couple pinches each of Salt & Black Pepper and Cornstarch. Gently toss Tofu to incorporate all the Oil and Seasonings being sure everything is coated.
Let it rest for 15-20 minutes to allow some flavor to get into the Tofu.
Place on baking sheet in an even layer. Bake for 25-30 minutes or until Tofu is deeply golden and a little crispy on edges. Be sure to toss Tofu around midway through baking time. Remove and set aside.
Pasta Sauce Preparation
Heat a large Skillet on medium high adding 1 tablespoon of Butter and a drizzle of Olive Oil.
Add chopped Mushrooms, sliced Asparagus & Onions and begin sautéing.
Add a pinch of Salt & Pepper and continue sautéing until vegetables begin to soften. At this point, remove from heat source and place on a dish and set aside.
Add Tomatoes and liquid to Skillet and begin simmering.
Proceed adding 1 tablespoon of Garlic Herb Seasoning, Onion Powder, Adobo, Minced Garlic & a couple pinches of Black Pepper and continue stirring.
Gently pour the Heavy Cream into the pan and stir consistently. At this time add 1 tablespoon of Butter, your cooked Vegetables back into Skillet stirring until the sauce begins to thicken.
Place your cooked Pasta directly into the sauce giving it a good toss. Add your Parmesan Cheese and 1 cup of Pasta water and continue tossing being sure the sauce coats everything. You may add more Pasta water if needed.
Give your Pasta a taste to check if additional seasonings are needed.
Toss your Garlic Herb Tofu right into Pasta and give it an additional toss.
Serve Pasta immediately with a garnish of fresh Parsley and a side of Garlic Bread.
