When you want to cozy up on the couch and watch a romantic movie while enjoying a delicious pasta meal, what do you do? Make pasta!!! Mushroom Raviolis with Roasted Red Pepper & Tomato Sauce was my invention of bringing cozy, comforting & delicious right to the comfort of my soul and where? Right on the couch watching what my husband calls a chick flick. I mean who doesn’t like a good chick flick?

Pasta comes in all sizes, shapes and flavor profiles. It’s what you want or have on hand at that moment that gives you insight on where you want to go with it. You want spaghetti, you make spaghetti. You want macaroni, you make macaroni. When I want Ravioli’s, I make Raviolis. You have your preference at times and I have mine. It’s what you do with them that takes the show. While some think some pasta choices compliment better with different sauces and it may be true, I like to think my skills in cooking makes everything go together.

Mushroom Raviolis with Roasted Red Pepper & Tomato Sauce is so much more than it sounds. Full of freshness from the Mushrooms, Cherry Tomatoes, the balanced acidity in the sauce from the Roasted Red Peppers and Marzano Tomatoes. Bringing it all together with time, love & seasonings served over your favorite Raviolis is all it takes to make your evening as enjoyable as it can be. Get ready for cozying up on the couch watching a great movie and enjoy a fantastic meal while sipping on a nice glass of wine. I wouldn’t want it any other way.

Mushroom Raviolis with Roasted Red Pepper & Tomato Sauce

Ingredients
  

Produce

  • 1 Package Portabella Mushrooms Chopped or Sliced
  • 1 Package of Cherry Tomatoes Washed
  • 1 Small Yellow Onion Sliced thinly
  • Parsley To Garnish

Canned Goods/Condiments

  • 28 oz San Marzano Whole Tomatoes Blend in food processor until smooth or give tomatoes a rough chop for chunkier consistency. May substitute for your preferred brand of tomatoes
  • 1 tbsp Minced or Chopped Garlic May substitute for fresh
  • 1 cup Roasted Red Peppers Sliced thinly or bought pre-sliced
  • 1 tsp Sugar

Pasta

  • 2 10oz Packages of Giovanni Rana Mushroom Ravioli May substitute for your favorite brand of Raviolis. Fresh pre-made Ravioli's can usually be found in Deli area

Seasonings

  • 1 tbsp Garlic Herb Seasoning Salt free
  • 1 tsp Onion Powder
  • 1 tbsp Ground Basil May use fresh
  • Salt
  • Black Pepper
  • Cayenne Pepper Optional

Oil

  • Olive Oil

Instructions
 

Prepare Sauce

  • Heat Skillet on medium/high adding a couple of drizzles of Olive Oil.
  • Add your Mushrooms, Cherry Tomatoes, Onion and a pinch of Salt & Pepper and begin sautéing until vegetables begin to soften and Cherry Tomatoes begin to burst open.
  • Gently add your San Marzano Tomatoes/Sauce, minced Garlic, Roasted Red Peppers into the Skillet and stir to incorporate all the ingredients.
  • Proceed to add Garlic Herb Seasoning, Onion Powder, Basil, Sugar and a couple of generous pinches of Salt & Pepper (to taste). Add Cayenne Pepper (Optional) for spice. Stir to incorporate ingredients.
  • Lower cooking temperature to medium and cover with lid. Let it simmer for 20 minutes or so.

Meanwhile, Prepare Raviolis

  • Prepare Raviolis according to package directions.

Serving Suggestions

  • Serve immediately after Raviolis are done.
  • Top off with fresh Parmesan Cheese and serve with a side salad and your favorite crusty bread to soak up the beautiful flavors on your plate.
  • Pairs well with a glass of Cabernet Sauvignon, Red Zinfandel or Sangiovese.
