Mushrooms Two Ways Burrito delivers a meaty and fulfilling option to any warm tortilla of your choice. Lion’s Mane and Trumpet/Oyster Mushrooms seems to be the rave of things nowadays. I was excited to find both available at a local farmers market. Along with the addition of a fresh Bean Salsa and some added additions, I was extremely impressed on the final result of of this recipe.

Mushrooms

Lion’s Main mushrooms offer anti-inflammatory benefits as well as supporting the immune system, heart health, digestive health amongst others. While they are a bit strange to look at and carry a fuzzy look hence the look of a Lion’s Mane, once prepared they take on a meaty texture reminiscent of chicken. Trumpet/Oyster mushrooms also carry similar benefits which also include gut health, bone health and lowers cholesterol. Two great options to challenge myself to create a recipe worth sharing.

Doing some research on how to prepare mushrooms in different recipes. I decided to prepare them two ways to deliver two options in one. While I am not keen to frying alot of food, I went with creating a batter that infuses Turmeric as well since it is a warm spice and also carries inflammatory benefits. With a golden light crispy breading, the Lion’s Mane mushrooms took on a consistency of Chicken and was shockingly delicious. I chose to sauté the Trumpet/Oyster mushrooms in a light Soy sauce base with Onions and Garlic. Pairing both of these together delivered two different textures and flavors mimicking two separate options even though they are both mushrooms.

I love bright fun flavors and creating a fresh Salsa is a simple as it can be. Using what vegetables you have on hand determines the final result. Fresh Cherry Tomatoes, Cilantro, Jalapeño with the addition of a can of Beans for added protein provided just what was needed to bring the burrito together. A quick Avocado and Sour Cream Crema with a hint of spice from the Sriracha was just the perfect touch delivering a perfect recipe. Mushrooms Two Ways Burrito

Lion's Mane and Oyster/Trumpet Mushrooms , some fried in a turmeric batter while others are pan seared in a soy sauce base. These meaty morsels are topped off with a fresh Bean, Tomato and Cilantro Salsa, drizzled with an Avocado Sriracha Crema and served wrapped in a warm burrito.

Ingredients
  

Produce

  • 1 lb Lion's Mane Mushrooms Wiped Clean an tore into bite size pieces.
  • 1 lb Oyster/Trumpet Mushrooms Wiped Clean and tore into bite size pieces.
  • 1 Yellow Onion Sliced thinly.
  • 5 Garlic Cloves Minced.
  • 1 Jalapeño Deseeded and slice 1/2 and chop the other half.
  • 2 Hass Avocados Mashed.
  • 1 Container Cherry Tomatos Halved.
  • 1 cup Fresh Cilantro Give it a rough chop.
  • 1 Lemon Juiced.

Dairy

  • 1 cup Sour Cream

Canned Goods

  • 1 can Red Beans or Bean of your choice. Drained and rinsed.

Pantry

  • 2 cups Flour
  • Soy Sauce
  • Sriracha Sauce

Seasonings

  • 1 tsp Garlic Herb Seasoning No Salt.
  • 1 tsp Onion Powder
  • 1 tsp Turmeric
  • 1/2 tsp Black Pepper
  • 1/2 tsp Adobo
  • Salt

Bread

  • 1 pkg Low Carb Burrito Wraps of your Choice

Oil

  • Peanut Oil or Oil of your choice.

Other

  • 2 cups Water

Instructions
 

Batter Preparation

  • Place Flour, Water, Garlic Herb Seasoning, Onion Powder, Turmeric, Black Pepper and Adobo into a bowl and whisk together until a smooth batter forms.

Salsa

  • In a bowl, place Beans, Tomatoes, chopped Jalapeño, Cilantro, Lemon Juice, a drizzle of Oil and a generous pinch of Salt. Stir to incorporate and set aside.

Mushrooms

  • Heat skillet on medium/high. Fill enough oil on bottom of skillet to submerge Mushrooms.
  • Coat the Lion's Mane mushrooms in the batter allowing excess to run off. Gently place into hot oil being sure not to overcrowd as they will begin to stick together.
  • Fry for 5-7 minutes or until golden brown. Be sure to flip over half way through frying cycle. Cooking time will vary depending on the size of the pieces.
  • Remove from oil and allow to drain on paper towel lined plate.
  • Continue the frying process until all the Lion's Mane mushrooms are done.

Meanwhile

  • Heat Skillet on Medium/High giving a drizzle of oil on the bottom.
  • Add minced Garlic and begin to sauté until begins to become fragrant.
  • Place sliced Onions and continue sautéing until Onions start to become translucent.
  • Gently add sliced Oyster/Trumpet mushrooms to pan and sauté until mushrooms begin to soften.
  • Season with a generous pinch of Salt and a light drizzle of Soy Sauce. Soy Sauce is already salty so you may omit the addition of Salt should you choose. Sauté for 3-5 minutes or until mushrooms are completed cooked through. Remove from heat and set aside.

Avocado Sriracha Crema

  • Place mashed Avocado, a drizzle of Sriracha and Sour Cream into a bowl. Stir until all ingredients are incorporated.

Burritos

  • Warm the tortillas.
  • Layer fried and sautéed Mushrooms with Onions, Bean Salsa and garnish with fresh sliced Jalapeños and Cilantro. Serve with Avocado Sriracha Crema and your favorite side and enjoy!
