Smothered Pork Chops is exactly what it sounds like. Pork Chops smothered in a rich Gravy incorporating whatever your heart desires. While I love the simplicity of a simply Gravy, there is nothing better than adding some meaty Mushrooms and caramelized Onions to make this meal just beautiful.

While I do not have the history on hand of how Smothered Pork Chops came to be but I can honestly say it was truly a blessing. Smothering in my kitchen simply means creating some type of Gravy or Sauce and just pouring it all over whatever I choose. You are not limited to just Pork Chops. There are so many versions using Chicken, Turkey, Steak etc. that your options are all up on the table. The key is to smother.. smother.. and smother until it is covered in nothing but a beautiful rich Gravy or Sauce that is worth indulging in. Never mind the calories for the day, never mind that healthy salad. You only live once so why not enjoy something out the ordinary just this once.

While I don’t often eat Pork for personal reasons, I do enjoy it occasionally. It’s one of those moments in time where I like to throw in the towel and jump to the other side where eating healthy doesn’t come into play. Seared Pork Chops finished in the oven and slathered in that thick glorious Gravy with Mushrooms and Onions just sounds like heaven. Serving it over Mashed Potatoes with a side of roasted Asparagus has got to be the answer to an indulgent soul.

Ingredients
  

Protein

  • 4 Center Cut Pork Chops

Produce

  • 1 Medium Onion Diced
  • 1 Package of Shiitake or Mushroom of your choice Sliced

Dairy

  • 3 cups Heavy Cream
  • 4 tsp Butter

Seasonings

  • 1 tbsp Garlic Herb Seasoning No Salt
  • 1 tsp Onion Powder
  • 1 tbsp Adobo Seasoning
  • Salt To Taste
  • Black Pepper To Taste
  • 1 tsp Browning Sauce Optional for rich color

Oil

  • Olive Oil

Instructions
 

Preparation

  • Preheat oven to 350°F
  • Season both sides of Center Cut Pork Chops with Garlic Herb Seasoning, Onion Powder, Adobo & Black Pepper.

Cooking Directions

  • Heat Skillet on Medium High.
  • Add a drizzle of Olive Oil and 2 teaspoons of Butter.
  • When Butter is melted and sizzling, gently place Pork Chops in Skillet.
  • Sear Pork Chops for 3-5 minutes on each side until Golden Brown and edges are crispy.
  • Remove and place directly into a baking dish and set aside.

Gravy

  • Melt 2 teaspoons of Butter into the same Skillet with the leftover grease from Pork Chops (adds additional flavor), add Sliced Mushrooms, Diced Onions and a pinch of Salt & Black Pepper.
  • Begin to sauté vegetables for 8-10 minutes or until they are tender and Onions are caramelized.
  • Add Heavy Cream directly into Skillet with Browning Sauce (Optional) Mushrooms & Onions being sure to stir consistently to avoid Cream burning.
  • At this point, you may taste to see if additional seasonings are needed.
  • Lower cooking temperature to Medium and continue stirring until Heavy Cream thickens and all the flavors come together creating a delicious Gravy.
  • Using a ladle, pour Gravy over Pork Chops in baking dish. Reserve some Gravy to top off once they are finished.
  • Cover with foil and bake for 30 minutes or until fork tender.
  • Serve over Mashed Potatoes and a side of your favorite vegetables being sure to ladle the delicious Gravy right over the top.
