Chicken is a common staple in many homes. Wings, thighs, breast and legs! Prepared in many different types of recipes and the sky is the limit to the creativity in one’s mind. The style of cooking can range from fried, baked, grilled to smoked, braised and pan seared amongst others. It doesn’t stop there. It is understanding what you do to manipulate the flavors into it. Since that is key to delicious and flavorful chicken. An opportunity to explore many different types of seasoning combinations.

Sour Cream & Onion Roasted Chicken on a homemade spick. Full of tenderness and flavor using simple ingredients to create a marinade and slathered over chicken prior to roasting in oven. Seasonins such as Garlic, Cumin, Onion Powder are perfect additions to everyday seasoning. There is room to swap out some of your favorite flavors. There are no set in stone flavors here. The makeshift spick has been circulating the cooking world of internet. Therefore it gave me an opportunity to try my hand on it. It’s a two for one technique. Utilizes an onion for the base which in turn can be enjoyed along with the Chicken. Easy, simple and perfect every time.

Reminiscent of the Gyro rave growing up, now you can enjoy them in the comfort of your own home. Served on warm Pitas topped off with Tomatoes, Onion, Tzatziki Sauce and any other toppings of your choosing. Serve along side your favorite side dish. Sour Cream & Onion Roasted Chicken

Ingredients
  

Protein

  • 2 lbs Chicken Thighs Boneless & Skinless.

Produce

  • 1 Yellow Onion Extra Large.
  • 4 Tomatoes Diced

Dairy

  • 1 cup Sour Cream
  • Tzatziki Sauce Homemade or Store Bought.

Bread

  • 6 Greek Style Pitas

Seasonings

  • 1 tbsp Garlic Herb Seasoning
  • 1 tbsp Onion Powder
  • 1 tbsp Adobo
  • 1 tsp Cumin
  • 1 tsp Tomato & Chicken Buillion
  • 1/4 tsp Black Pepper

Oil

  • Olive Oil

Instructions
 

Marinade

  • Place Chicken Thighs, Sour Cream, a drizzle of Olive Oil and all the Seasonings into a large Bowl. Using your hands, massage all the ingredients into the Chicken being sure to distribute throughly and coat evenly. Set it aside and let it marinade for minimum 30 minutes. Can be prepared, covered and placed in refrigerator to marinade overnight for better flavor.

Roasting Chicken

  • Preheat oven to 375℉.
  • Peel and slice the ends of Onion off and place into roasting pan. Slice 2-3 thin slices of Onion to layer in between Chicken Thighs. The remaining Onion piece will be the base.
  • Place 3 Skewers into center of Onion base forming a small triangle.
  • Begin layering Chicken Thighs sliding them onto the Skewers in a rotating effect. Be sure to incorporate Onion slices within.
  • Roll a few pieces of Aluminum Foil into balls and place around Onion Base to stabilize and keep Chicken tower from falling over.
  • Gently place in preheated oven and roast for 40-45 minutes or until internal temperature reaches 165℉. Remove and let it rest for a few minutes before slicing.
  • Warm the Pitas, slice the Chicken and place a layer down middle. Slice cooked Onion and layer over Chicken. Top with diced Tomatoes and Tzatziki and enjoy with your favorite side.
