Looking for a more robust pepper with a mild flavor and sometimes a little heat, Poblano Peppers are a way to go. Poblano Peppers heat levels vary in spice and are commonly used in Mexican dishes. While I find them mild in heat, they provide a smoky and earthy flavor similar to a Green Pepper with a punch. A perfect option for Southwestern Stuffed Poblano Peppers.

Southwestern dishes carry a bold, complex and smoky profile. Common ingredients used in these dishes are Chili Peppers, Cumin, Beans, Corn amongst others. Some of my favorite flavors that provide many of my Mexican and Spanish inspired dishes. The perfect combination for a Southwestern Stuffed Pepper.

Let’s take this to the kitchen and create a new favorite dish that is simple but full of flavor. Pair it with Cilantro Lime Rice, a simple salad or any other side of your choosing. Looking to add a bit of elegance to dinner. A glass of Riesling for a mild sweetness or Medium bodied Tempranillo will complement this dish.
