Southwestern Stuffed Poblano Peppers

Mildly spiced Roasted Poblanos stuffed with Ground Beef, Black Beans, Rice, Onions, Adobo Chiles & Cheese. Topped off with melted Cheese, Adobo Sour Cream and Avocado Cilantro Crema.

Ingredients
  

Protein

  • 1 lb Ground Sirloin

Produce

  • 8 large Poblano Peppers Sliced in half and seeds removed.
  • 1 small Yellow Onion Diced.
  • 2 tbsp Garlic Minced.

Pantry

  • 3 tbsp Adobo Chiles in sauce. Minced. May adjust to spice desired spice level.
  • 1 cup White Rice Prepared.
  • 15 oz Black Beans Rinsed.
  • 2 tsp Mushroom Soy Sauce May substitute for regular Soy Sauce.
  • Herdez Taqueria Avocado Cilantro Street Sauce Found in local grocery store near taco shells etc. May substitute for your preferred brand or sauce.

Dairy

  • 1 cup Mexican Blend Cheese Shredded. May substitute for your preferred cheese.
  • 1 cup Mozzarella Cheese Shredded.
  • 1 cup Sour Cream

Seasonings

  • 1 tbsp Garlic Herb Seasoning No Salt.
  • 1 tbsp Adobo
  • 1 tsp Cumin
  • Salt
  • Black Pepper

Instructions
 

Ground Beef Mixture Preparation

  • Preheat oven to 350℉.
  • Line you baking dish with Aluminum Foil for easy clean up. Spray a thin layer of Cooking Spray.
  • In a large mixing bowl, add Ground Sirloin, prepared Rice, Black Beans, Minced Onion, 1 tbsp Minced Garlic, 2 tbsp Adobo Chiles, Mushroom Soy Sauce, 1 cup Shredded Mexican Blend Cheese, Garlic Herb Seasoning, Adobo & Cumin. Using your hands, mix ingredients together to incorporate being sure seasonings are distributed throughly.
  • Stuff Meat mixture generously into Poblano Pepper halves and place in baking dish. Continue step until all are done.
  • Cover dish with additional aluminum foil and back for 30 minutes or until Pepper is tender and meat mixture internal temperature is 165℉.
    ** Baking time will vary depending on size of Peppers and meat mixture.
  • Remove from oven and uncover. Top each Poblano Pepper with Shredded Mozzarella Cheese. Place back in oven uncovered and bake for additional 10 minutes or until Cheese is completely melted.

Adobo Sour Cream

  • In a small bowl, add Sour Cream, 1 tbsp Adobo Chiles, 1 tbsp Minced Garlic and a pinch of Salt & Black Pepper to taste. Stir to incorporate and set aside.

Serving

  • Put two Stuffed Poblanos on plate. Top off with Adobo Chile Sour Cream and a generous drizzle of Avocado Cilantro Street Sauce. Enjoy with your favorite side dish or enjoy on its own. Delish!
