Instant Pot Sofrito Chicken

Chicken Breast marinated in latin style seasonings and cooked in an Instant Pot delivering moist, tender & juicy Chicken served with Sofrito Sauce right over top.

Ingredients
  

Protein

  • 4 Chicken Breast Skin On & Bone in. Clean Chicken and remove excess fat. Pat dry. May substitute for Chicken thighs, Bone in and Skin on.

Produce

  • 1 Onion Diced
  • 2 tbsp Garlic Cloves Minced

Seasonings

  • 2 tbsp Adobo Seasonings Can use less or more depending on how much seasoning preference.
  • 2 tbsp Garlic Herb Seasonings No Salt
  • 2 tbsp Onion Powder
  • 2 tsp Cumin
  • 2 tsp Black Pepper
  • 2 tbsp Sofrito Better Than Bullion If cannot be found in your local grocery store, may substitute for traditional homemade or frozen which can be found in Latin section of store.
  • 2 packets Sazon Seasoning Packets

Pantry

  • 1 tbsp Cornstarch

Oil

  • Olive Oil

  • Water

Instructions
 

Marinade

  • Place 1/2 of Seasonings, 1/4 cup of Olive Oil and a 1/4 cup of Water into a bowl. Whisk to incorporate.
  • Add Chicken Breast. Using your hands, massage the marinade into the Chicken being sure to coat thoroughly. Set aside and allow to marinade for 30 minutes. This can be prepared and marinated overnight in refrigerator for better results. Bring to room temperature before starting cooking process.

Instant Pot

  • Turn Instant Pot Sauté function on high for 10 minutes.
  • Add a drizzle to coat bottom of pot.
  • Shaking off excess marinade, add Chicken Breast skin side down. Brown Chicken for 5 minutes or until nice browned crust forms then flip over and continue to brown. Depending on the size of your Instant Pot and size of your Chicken Breast, you may need to do in batches. Do not over crowd as you want to create a good sear.
  • Remove Chicken and set aside.
  • Turn off Instant Pot.
  • Add 2-3 cups of water and remaining seasoning into Instant Pot and stir being sure to scrape up the browned bits on bottom. You do not want to allow the bits to stick to pot as it may burn during the remaining cooking process and it will also allow additional flavor to be added to broth.
  • Place trivet inside pot and add Seared Chicken on top.
  • Attached the lid on and seal being sure the valve is set to seal. Select Pressure Cook for 10 minutes. It will take up to 10 minutes to build pressure and begin counting down the cooking cycle from that point.
  • Once the cook time is over, allow the pressure to release naturally until completely done.
  • Gently remove lid and place Chicken on a dish and set aside to rest.
  • Turn Instant Pot on Sauté High
  • Add Onion and Garlic giving it a stir.
  • Mix a slurry of equal parts Cornstarch and Water and add directly into broth. Stir into broth and bring up to a simmer to allow sauce to thicken. Taste sauce to see if additional seasonings are needed. If looking for more sauce, add more water and adjust seasonings as needed. Simmer until Onions are tender and Garlic is fragrant. Stir periodically as this process will be fast. Shut off Instant pot and let rest until ready to use.
  • Serve Sofrito Chicken over Rice, Potatoes or your favorite side dish and ladle sauce right over it.
