Produce
- 5 Cloves of Fresh Garlic Minced
- 2 cups Carrots Diced
- 1 cup Celery Chopped
- 1-2 cups Shiitake Mushrooms or mushrooms of your choice Broken down to smaller pieces
- 1 Onion Sliced or chopped
- 1-2 Tomatoes (Optional) Chopped
- 1/4 cup Cilantro Chopped
- 1 tbsp Fresh Ginger Grated or paste may be substituted
- Juice of 1/2 of Lemon
Beans
- 2 cups Dry Brown or Green Lentil Beans Washed and set aside
Stock
- 8 cups Vegetable Broth of your choice
Seasonings
- 1 tbsp Cumin
- 2 tbsp Garlic Herb Seasoning No Salt
- 1-2 tbsp Turmeric
- 1 tsp Sea Salt
- 1 tsp Onion Powder
- 1 tsp Black Pepper
- 1 tsp Dried Thyme
- 1 tsp Dried Rosemary
- 1/2 tsp Red Pepper Flakes
Preparation
Heat your Stock Pot or Dutch Oven on medium/high drizzling Olive Oil to coat the bottom.
Add Onions, Celery, Carrots, Mushrooms & Garlic and begin sautéing until ingredients begin cooking through and start to soften.
Begin adding Lentils, Sea Salt, Black Pepper, Onion Powder, Cumin, Garlic Herb Seasoning, Thyme, Rosemary, Fresh Ginger, Red Pepper Flakes (Optional) & Turmeric and stir all together and continue sautéing. It will become very fragrant while seasonings infuse together.
Gently pour in Vegetable Broth, Tomatoes, Cilantro & Lemon Juice and stir to incorporate.
At this point, you can taste Broth to see if additional seasonings are needed.
Cover and let it simmer on medium/high for 30 minutes or until Lentil's soften, being sure to stir periodically.
