Loaded Chicken Alfredo Spaghetti Squash

Spaghetti Squash loaded with Ground Chicken, Mushrooms, Peppers, Onions, Spinach & Tomatoes served in Alfredo Cream Cheese Sauce and topped off with Mozzarella Parmesan Cheese and baked to bubbly deliciousness.

Ingredients
  

Protein

  • 1.5 lbs Ground Chicken

Produce

  • 2 Large Spaghetti Squash Seeds and center removed and cleaned.
  • 10 oz Bella Mushrooms Sliced.
  • 1 Yellow Onion Sliced thinly.
  • 1 Green Bell Pepper Sliced thinly.
  • 3 cups Spinach Fresh.
  • 12 oz Cherry Tomatoes Halved.

Dairy

  • 8 oz Cream Cheese Cubed
  • 16 oz Shredded Mozzarella/Parmesan Blend

Pantry

  • 15 oza Mushroom Alfredo Sauce May substitute for your preference.

Seasonings

  • 1 tbsp Garlic Herb Seasoning No Salt.
  • 1 tsp Onion Powder
  • 1 tbsp Adobo May substitute for you brand of Seasoning.
  • 1/2 tsp Cumin
  • Salt
  • Black Pepper

Oil

  • Olive Oil

Instructions
 

Squash Preparation

  • Preheat oven to 350℉.
  • Drizzle Olive Oil over Squash.
  • Sprinkle a couple generous pinches of Salt & Black Pepper over Squash. Using your hand, rub into the Squash center area and over top.
  • Add halved Tomatoes and a pinch of Salt into center and drizzle a little more Olive Oil over them. Give them a quick toss.
  • Place seasoned Squash on baking pan facing upwards and bake in oven for 45 minutes to 1 hour or until fork tender. You want to be able to use a fork and shred into spaghetti strings.

Chicken Alfredo Cream filling

  • Heat Skillet on medium/high giving it a drizzle of Olive Oil to coat the bottom.
  • Add ground Chicken and begin to brown being sure to break up to separate it. Add Mushroom, Onions, Peppers, Garlic Herb Seasoning, Adobo, Onion Powder, Cumin & a couple generous pinches of Black Pepper and stir to incorporate being sure to mix in seasonings well. Continue cooking for 7-9 minutes until vegetables begin to get tender and Chicken is no longer pink.
  • Slowly add Alfredo Sauce and cubed Cream Cheese and stir to incorporate. Lower cooking temperature to medium and cover skillet with a lid. Let it simmer for 6-8 minutes.
  • Add Spinach and stir. Spinach may look like a lot but will wilt and reduce as it is cooked. Stir periodically. Taste to see if additional seasoning is needed. Turn off heat and set aside until Spaghetti Squash is done.

Spaghetti Squash

  • Once Spaghetti Squash is fork tender, gently scrape sides to loosen. Fill cavities with Chicken Alfredo Cream mixture. Top off with shredded Mozzarella & Parmesan Cheese. Continue until all are completed.
  • Place back into oven and continue baking for additional 10 minutes or until Cheese is bubbly and melted.
  • Remove and top off with fresh herbs of your choice. Enjoy!
