Sweet Peach Pork Belly Bites
Sweet and Savory Peach Glazed Pork Belly Bites infused with a Rum twist.

- 2 lbs Pork Belly Sliced into bite size pieces.
Produce
- 4 Cloves of Garlic Minced.
- 1/2 Yellow Onion Diced
- 1 cup Peaches Peeled and diced. May use frozen but may require additional brown sugar in recipe depending on sweetness level desired.
- 1 tsp Lemon Juice
Pantry
- 1/4 cup Soy Sauce
- 1/4 cup Rice Wine Vinegar
- 1/4 cup Peach Preserves
- 1/4 cup Light Brown Sugar
- 1/4 cup Water
Seasonings
- 2 tbsp Ground Ginger
- Cayenne Pepper Optional
- Salt
- Black Pepper
- Sesame Seeds
Rice
- 4 cups White Rice Prepared
Pork Belly
Heat Cast Iron Skillet on medium/high.
Add Pork Belly pieces directly to skillet. Do not overcrowd and may need to be cooked in batches.
Season generously with Salt and Black Pepper.
Pan sear Pork, stirring them consistently until lightly crispy and browned on all sides. Cooking time will vary depending on size of cut pieces but should take approximately 10 minutes or so.
Remove cooked Pork pieces and set aside.
Sweet Peach Glaze
Lower cooking temperature to Medium.
Using the same Skillet, add Minced Garlic and chopped Yellow Onion and saute for 1 minute to release the flavor.
Add Peaches, Peach Preserves, Soy Sauce, Rice Wine Vinegar, Lemon Juice, Water, Coconut Rum, Light Brown Sugar, Ginger and a pinch of Cayenne, Salt & Pepper.
Stir to incorporate ingredients.
Simmer for 3-5 minutes stirring periodically. Remove from heat.
Add Pork Belly bites into sauce and stir to coat pieces. Let it sit until ready to serve.
