Churrasco Steak Roll Ups is my redemption on a Classy Date Night dinner for two! The idea behind this menu was to create something special to show my affectionate side of me. Affectionate meaning.. putting feeling into my meal. I wanted something warm, tender and heartfelt. Something elegant but rich in flavor. Churrasco Steak Roll Ups was a dish that started one way and ended up being something totally different in taste and presentation. It seems to happen to me a lot which is a good thing because the end result always come out so much more than I expected. That is the life of a cook who looks for opportunities to try something new. Let me share a great dinner for two that promises and enjoyable evening of tasteful bliss.
Churrasco Steak Roll Ups

Ingredients
Meat
- 1 Package of Churrasco /Flank Steak
Produce
- 1 Package Portabella Mushrooms Sliced
- I Large Green Pepper Slice Thinly
- 1 Large White Onion Slice Thinly
Dairy
- 1 Package Mozzarella Shredded
- 2 cup Heavy Cream
- 3 tbsp Butter
Seasonings
- 1 tbsp No Salt Garlic Herb Seasoning
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- Salt
- Black Pepper
- Beef Bullion (Optional)
Oil
- Olive Oil
Other
- Toothpicks
Instructions
- Prepare Filling
- Add 1 tablespoon of Butter and a drizzle of Olive Oil in a Skillet and heat on medium until ingredients begin to sizzle.
- At this point, add Sliced Green Peppers, Onions, Mushrooms, a pinch of Salt & Pepper to Skillet and begin to sauté until Vegetables soften and Onions become transparent.
- Remove from heat to cool down and set aside.
- Spoon a little filling to the side to use in the Gravy we will prepare later on to give it some additional flavor and texture.
Prepare your Churrasco/Flank Steak
- Spread your Steak out on cutting board.
- Remove any extra fat and connective lining on Steak. This can make Steak chewy and unappetizing.
- Pound your Steak out using a Meat Mallet for additional tenderness and to give it an even layer as this type of cut of Meat tends to come in all sizes and shapes.
- Depending on how long your Churrasco/Flank Steak is will determine if you can get 4 or 6 servings out of it. Keep in mind that you will need enough room to be able to roll over stuffing and overlap a bit so that toothpicks can keep it secured together.
- Season both sides of Steak with Garlic Herb Seasoning, Garlic Powder, Onion Power, Salt & Pepper to taste.
Assemble
- Spray your baking dish with nonstick spray.
- Take first piece of Steak and lay flat directly in front of you.
- Place a light layer of Shredded Mozzarella.
- Add a spoonful or two of filling being careful not to put too much as it will fall out the sides.
- Add another light layer of Shredded Mozzarella on top.
- Slowly begin to roll the Steak from one end to the other being sure to overlap the ends to be able to place a couple of toothpicks to secure ends together. If filling begins to slide out, just push right back in to secure it.
- Place into a baking dish.
- Continue assembling all other portions.
Prepare Gravy
- Using the filling you set aside earlier and any filling you may have left over, you will begin to create a Gravy to pour over top.
- Add filling back into the same Skillet you prepared it in.
- Heat Skillet on medium to begin process.
- Add Heavy Cream, remaining 2 tablespoons of Butter and 1/2 of Beef Bullion Cube, a pinch of Salt & Pepper (if needed) and continue stirring in skillet being sure to scrape up any bits of flavor from using it earlier. This will give it additional flavor.
- As it continues to simmer, it will reduce and thicken. Taste to be sure no additional seasoning is needed. If you want extra Gravy, add more Cream and adjust seasonings.
- Once thickened, gently pour gravy over Churrasco/Flank Steak Roll ups and reserve some to the side to pour over top prior to serving.
- Broil on high for about 4 minutes. Gently flip over and continue to broil another 3-4 minutes or to your desire doneness.
- Remove and let it rest for a few minutes.
- Serve over your favorite mashed potatoes and pour additional Gravy right over top.
- Suggestion: This pairs well with a glass of red wine as both compliment each other well on the pallet.
